I am very, very fortunate to be at home with my 2 girls (3y and 4m) and experiment with food! We go to the grocery store WAY to much and we probably have enough food in our house to make it through a disaster! My husband is great and up for most anything new (as long as it is not vegetarian :) I have a pretty small kitchen and limited counter space, but I LOVE IT!
My favorite things to cook
I love to cook anything new(as long as I can find the ingredients w/ ease) and casseroles and slow cookers are a lot of fun. Have been on a waffle kick since I got a new waffle maker (thus the reason for the South Beach Diet :)
My favorite family cooking traditions
my mom's thanksgiving dinner. Her stuffing is something I crave all year long. It's funny, it is ALWAYS the same (however they seem to make even better gravy every year...)with the 20lb+ bird stuffed, mashed potatoes, carrots, turnip, butternut squash, gravy, stuffing, cranberry made a variety of ways, celery stuffed with cream cheese, dates filled with peanut butter and almost a pie per person! Apple, squash, pumpkin, and chocolate cream with always a surprise added like black bottom banana cream. oh man, my mouth is watering just thinking about it!!!
My cooking triumphs
well, I haven't had any to write of quite yet, however I was so 'in love' with myself making those stuffed peppers last night that I think those might be to date! hahahahaha!!!
My cooking tragedies
My husband ALWAYS wanted beef wellington. Since the day I met him, 'what do you want for dinner?" and he never fails to deliver eith "tacos or beef wellington". So, I made him beef wellington and guess what? He never mentioned it again! would have been delicious if I hadn't put WAY to much puff pastry on it and had to nuke it because it was raw. oops!

Incredibly Cheesy Turkey Meatloaf
very, very good! I did add worcestershire and ketchup to the mix and only had sharp cheddar cheese. My husband dislikes ground turkey and anything I make with it but he loved this and my 4 year old did as well! thanks

Beef and Lentil Soup
this was a HUGE hit! Only difference, I used beef broth. My husband raved and my 4 year old asked for more...tough crowd too! will definatley add to my cookbook and make again :)

Quick and Easy Alfredo Sauce
yum, yum, yum! I made it exact and added to bow tie pasta w/ leftover chicken and some broccoli and my 4 year old DEVOURED it! will definately make again :)
