Butterscotch Pudding

This is sweet and rich, just like butterscotch pudding should be! Even better with 2 or 3 tablespoons of butter added after cooking. I made it in the microwave, first heating the milk and adding to eggs/milk/salt that had been wisked together. Vanilla and butter went in after cooking.

Beat and Bake Orange Cake

A new favorite at our house!! I used orange juice concentrate in the frosting, instead of the juice and zest. It was VERY orange and fabulous!

Spritz Cookies II

A lovely basic spritz. I added a touch of salt, just to be sure it wasn't bland. And it's such dry weather right now, I added a tablespoon of water to make it workable dough. Thanks!

Apple Crisp III

This was great with changes suggested by previous reviewers! I included the cinnamon with the flour (and used extra per my own taste), and I didn't want it to be as damp as some reviewers suggested it was, so I added about 1/4 cup extra flour. This received rave reviews and was gone very quickly. I will use less sugar next time.

Red Velvet Cake IV

I adore this recipe (I've made only the cake part and use a standard cream cheese frosting). I do mix it more like a traditional cake recipe: combine all dry stuff, combine all liquid, add these alternately to creamed sugar/butter/egg. That has given me consistently beautiful results several times. I do like the cake a little bit redder, so when that is wanted, I add more coloring.

Blackberry Cobbler

This is a great base recipe, ready for adjusting if desired. I used white whole wheat flour with baking powder and salt, then I reduced the sugar by 1/2 cup, and it could probably be reduced more. My batter was too wet, because I was trying to use up some milk, so it's delicious but more wet than I expected. The wet batter also let my berries sink, so I'll make sure to keep it more solid next time. Thanks for this easy one that the kids can help with!

Coconut Cream Pie

Awesome! I use the Butter Flaky Pie Crust from this site, and it was incredible. I made the filling the night before, to intensify the coconut flavor through the custard, and that was a great idea. It held up perfectly through a meringue addition and baking, as well as sitting out in the warm spring air at a picnic. We will have this again! Added: I have used the same basic recipe without coconut to make vanilla or chocolate pudding, and they are fantastic!

Oven Fried Chicken III

I loved the flavor from the mayo. I followed a suggestion and turned the pieces over halfway through cooking time, and that was very good advice. Next time, I'll thin down the mayo so that I can dip instead of "smear" it on by hand.

Okra Patties

Definitely a keeper! I used a little higher proportion of okra, because I needed to use it up. I added garlic powder and thyme, and that was definitely a nice combo. This recipe could be used with any vegetable fritter idea.

Butter Flaky Pie Crust

This will be my new standard! Thank you! I added a bit more salt because of what I was filling the shell with, and I made it in the food processor to save time. Despite that and rolling out immediately without chilling, it still turned out perfectly! The flakes are the best I've ever made with a non-shortening crust.

Easy Polenta with Tomato Sauce

This is great. I needed a plain polenta to use with another recipe, so I omitted the spaghetti sauce. The flavor is wonderful, this will be my standard polenta from now on! I'll plan on making it a day ahead and refrigerating so I can cut firm slices in the future.

Ranch Dressing II

I used this recipe to make a dip with blended cottage cheese and buttermilk, for nutritional purposes. It is delicious! I also added finely shredded sharp cheddar to dry up my dip texture and richen the taste, it is a great dip!

Sophie's Zucchini Bread

Exactly what a person is looking for in a traditional zucchini bread. I am overrun with yellow summer squash, so that's what I used, and 2 cups of white whole wheat flour for some of the all purpose. I also sprinkled in about 1/4 teaspoon allspice, and the whole thing was lovely.

Healthy Banana Cookies

This is a good standby for healthy snacking. My bananas weren't very ripe, and I think they helped hold the shape of the cookies I formed. I used half raisins and half prunes for the dates, because that's what I had on hand, and whizzed them in the food processor to chop. I tossed everything else in the recipe into the food processor on top of them and combined it that way (not over-doing it), and it was super fast.

Crisp Oatmeal Cookies

I used butter for the shortening and "white chocolate" chips for the chips, and this was a lovely, albeit sweet, cookie. Very nice.
