Honey Oatmeal Chewies
Did I miss where the egg was added? I beat egg and added same time as milk. I substituted half the flour w/ whole wheat flour, and instead of shortening, used 1/2 c. butter and 3/4 c. coconut oil. Also, I used sucanat instead of white sugar. Creaming the shortening/sugar doesn't quite come out the same, but the cookies were still great!

Morning Glory Muffins II
I substituted half of the flour with wheat flour, coconut oil instead of vegetable and half of the sugar with unrefined organic sugar. I used a juicer for the carrots & apples to make them more digestable, which after combining juice and pulp amounts to approx. 1 c. each (rather than 1.5 c). Note that the batter is thick and sticky. Also, I added 1/2 c. dried pineapple pieces (soaked for an hr in water then drained) and a tbs of dried orange zest. Muffins turned out great and extremely moist! They also freeze well.

Creamy Blueberry Pie
Definitely room for experimentation with this recipe. I used 1/4 c. sugar and 1/4 c. splenda granular for the filling - like other reviews, it depends how sweet your berries are and how sweet you like it. I also added tsp of vanilla and of cinnamon. For crust, I used pastry dough and pressed into bottom of dish, baked until light brown, then added filling. For topping, I used 1/4 c. oatmeal and 1/4 c. flour, and substituted brown sugar instead of regular white. The overall consistency came out more like bread pudding (maybe I added too much flour to the sour cream mixture?), but it was still wonderful!
