Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

Excellent! I was afraid the blue cheese or bacon would take over this dish but not so. I omitted the frying and baked them for an additional 10-15 minutes.

Easy to make and great taste. They did not come out as crisp as I would have liked so next time I'll try cranking the temperature up a bit and playing with the time.

Quinoa Side Dish

Great "change of pace" side dish with a light flavor. I served it with "Chicken Breast Stuffed with Blue Cheese" which was pretty rich and the quinoa helped balance it out.

Lemon Pepper Pasta

As one reviewer said, there is no way this would be a main dish. But it is a good base for a light and tasty chicken and pasta dish! First, I substituted lemon pepper for the ground black pepper. Then I added chicken, marinated in bottled lemon pepper marinade, grilled on the BBQ and cut into 1 inch cubes. I also added sauteed minced garlic and sliced green onions and added them to the pasta mix along with some baby peas. Now, it's fit for a main dish.

Pat's Baked Beans

Absolutely Outstanding! As with almost everything I cook, I made a few (very few for me) changes. I added about 4 tablespoons of vinegar, 1 each small yellow, red and orange sweet peppers chopped, and a dash of cayenne pepper. I also substituted sweet onion for the onion and chili bottled sauce for the ketchup. One last thing. I mix everything in a 4" deep foil pan, cover with foil and cook them on the BBQ for an hour.

Almond-Crusted Tilapia

Absolute Outstanding! This is one of the few recipes that I've ever made where I would not change one thing. I do my Tilapia on the BBQ in a fish grilling rack and this produced the most wonderful crispy golden browned almond crust ever. Spray both side of the basket with Pam before placing the coated fillets in. I do most of my BBQ'ing on medium (MOM) so I left the fillets on for about 7 minutes total per side turning twice until the crust on each side was a golden brown.

Stuffed Chicken Valentino

What a great recipe and something truly different from the old chicken circuit! I used munenster cheese in place of the mozzarella cheese and green onion in place of the chive, simply because that's what I had. I also served it with sliced avacado on the side. What makes this recipe so great is that you can pretty much use any type of cheese you like (have) and I suspect it would taste just as good. The roasted red peppers make the difference and will go with just about any cheese!

Gulliver's Cream Corn

Equess3n's friend got the "Hand out Recipe" that leaves out the secret ingredient. Change the milk to evaporated milk and eliminate the sugar and you've got the Gulliver's cream corn that all Californian's came to love!

Best Ever Split Pea

Outstanding! This is now my new "Go To Split Pea Soup Recipe". I doctored the recipe a little (as I do with almost everything I make) by adding a medium potato and using celery seed because I didn't have celrey. I also cut back on the chicken broth to about 6 cups. This, and the potato helped to thicken the soup without having to add flour, which I think tends to bland soups. However, the base recipe was responsible for creating a wonderfully tastey soup that Robin should be proud of!
