Eggplant Parmesan II

This recipe was okay... I personally think it tastes better frying the eggplant in olive oil rather than baking it. It's unhealthier, but mine didn't get crispy like it does when you fry it and that affected the end result of the dish. It came out mushier than when it's fried first. It's not a terrible dish, but I just don't see how everyone thinks its so much better than the traditional way. I also tried breading my eggplant in a gallon-sized plastic bag and while it was cleaner and easier, I don't think it coated the eggplant as well as doing them individually on a plate. I'm going to stick to my good old-fashioned recipe, even though it's a little unhealthier. I might try Bobby Flay's version on the Food Network site, if I want to try a different version next time. The eggplant is fried, too! Nice attempt, though, at making a traditionally unhealthy dish healthier.

Awesome Slow Cooker Pot Roast

I followed sdgirl's instructions, but added some green beans, too. It was really delicious! But, I tried the gravy before I added the veggies and it was awesome! So, next time, I'll just make some mashed potatoes and green beans and/or carrots on the side. Sandra is right, the veggies kind of make the gravy turn out a bit bland... it is soooo much better without them. However, I really recommend using the 1 cup of beef broth and the 1/4 cup of red wine (I used Pinot Noir because that was what I drank with it) because it really did enhance the flavor a lot. Best pot roast I've ever tasted... thanks, Brenda and sdgirl! :)

Smothered Green Beans

Great recipe! I did follow the advice of one reviewer and steamed the green beans first and than added all the yummy stuff and it turned out perfectly... not to crunchy and not too soft! I did have to soak up some of the grease with a paper towel, though. I also toasted some blanched almonds (about 1/2 cup) and added them, too. It was a delicious recipe and I will definitely make this again! Thanks!!! :)

Savory Turkey Gravy

After reading a few other reviews, I feel bad for giving the recipe 5 stars because I added pan drippings! I used this recipe because it got so many good reviews, but I wanted to use my pan drippings, so I did both! Of course, it turned out perfectly! I did have to add a little corn starch (about a tbsp or 2) to make the gravy a little thicker and I added 4 cups of chicken stock instead of the 5 because I added the drippings. My Stater Brothers didn't carry turkey stock (weird, huh?!) and I didn't want to go to another grocery store to get it, but the chicken stock was fine. Great and easy recipe and I will use it again next year! :) Thanks!!!

Cranberry Sauce

I think the key is the orange juice! Everyone loved this cranberry sauce... my parents were so impressed! They both said that they have never really loved cranberry sauce, but they loved this one! They even said it was better than my Grandma's (she was a great cook, so this is a great compliment... love you, Grandma!). But, this recipe is definitely a keeper! I added a dash of cinnamon like one reviewer said and it did add just a nice hint of cinnamon. If I'm brave next year, I'll use 1/2 C of white sugar and 1/2 C of brown sugar, but the recipe is wonderful as written! Thanks for a great holiday this year!!! :)

Day Before Mashed Potatoes

It was so awesome to have these made and in the slow cooker ahead of time! I made these 4 hours before dinner and put PAM in a slower cooker and these mashed potatoes got so creamy and tasty! This was my first Thanksgiving (that I've hosted) and everything turned out perfect thanks to this site. Thanks Erin for a wonderful recipe! It was a big hit in my family.

Awesome Sausage, Apple and Cranberry Stuffing

Awesome! I had the best Thanksgiving this year thanks to some of the best recipes on this site! I did have to make a few minor changes because I went to Stater Brothers this year and they didn't carry turkey sausage or turkey stock (strange, huh?!). I used pork sausage (a little greasy, definitely use turkey sausage) and chicken stock. I omitted the turkey liver, but other than that, I followed the recipe by the letter and everyone loved it! I baked it in the oven instead of filling the turkey like other reviewers and it turned out great. I probably added too much stock because I didn't want it dry, so next year I'll put in the amount that the recipe calls for and adjust as needed. I'd use fresh herbs instead of dry and a granny smith apple next year, but otherwise... it really is an AWESOME recipe! :) Thanks!!!!!

Tuna Noodle Casserole

This is the best tuna noodle casserole that I have ever made/tried! I did make some modifications, though and I hate to give a recipe 5 stars if I changed it, but it was really, really good. Instead of the green pepper, I added red bell pepper because that is what I had on hand and I like the taste/color that it adds. I added a cup of peas, a little extra cheese (about 1/4 cup because I eyeballed it), and a little extra salt on accident (I read the recipe incorrectly). I was afraid that it would be too salty, but it wasn't. I would recommend the salt quantity that the recipe calls for, though. I also added light mayonnaise. I was really afraid to add the light mayo because the recipe specifically states that it doesn't work well with light mayo, but it seemed fine to me. I only added about 1/4 cup, though because that was all that I had left! Oh, I also used albacore tuna because I think it has less of a "fishy" taste (I know! Tuna Noodle Casserole and I wanted less of a fishy taste!). All in all, this was a really good recipe and I will definitely make this again. I agree with Becky, Florence is a really good cook to make Tuna Noodle Casserole taste this good.

Mandarin Orange, Gorgonzola and Almond Delight

This salad was excellent! I used a spring mix and followed the advice of other users and added twice the amount of the mandarin orange juice. It turned out perfect! Next time I make this, I think I would like to try pecans and maybe spinach as some of the other reviewers recommended. I definitely recommend trying this recipe! Thanks for sharing.

Erin's Indonesian Chicken

This recipe was really, really good! I did change the recipe slightly... I know, it probably isn't right to give this recipe 5 stars if I changed it, but it was really good. I didn't have any chile paste, so I used tabasco sauce instead. The ingredients are fairly similar. I used about 1 1/2 teaspoons. I soaked the chicken (just to coat) in additional low sodium soy sauce before cooking (about 10 min.) and stir-fried it with 4 cloves of minced garlic and crushed red pepper to taste. I love garlic! I also used crunchy peanut butter and omitted the extra peanuts. I was afraid of adding too many peanuts (I've done that to Kung Pao Chicken before and it doesn't taste good!). The amount of "peanutty" taste was perfect. The only thing that I would do different next time I make this recipe is steam the green beans for about 7-8 minutes instead of 10. I overcooked them slightly... it was my fault because I should've been watching them as cooking times vary. Other than that, everything was delicious. Thanks for sharing, Erin. This recipe is a keeper.

Classic Spanish Sangria

This is a great recipe for authentic Sangria! We thoroughly enjoyed it and this is coming from someone who lived in Spain! I recommend using a Rioja wine to get the most authentic taste. I used Bacardi rum and I didn't have any orange juice on hand so I squeezed oranges. It tasted divine! Thanks for sharing.

Luscious Spinach Artichoke Dip

This recipe was okay... I think the problem was that I expected it to taste like the appetizer from TJI Friday's and it didn't. It lacked something and was too creamy. I think it had too much sour cream and not enough romano or even monterey jack cheese. I followed the recipe exactly as stated and served it right out of the oven. I thought it tasted best hot and when it cooled down it actually didn't taste too good. I served this dip at a party and had a ton of leftovers, so it didn't go over too well with my guests... I'm going to keep on looking for that TJI Friday's look alike!

Chili I

I made this recipe for a chili party and nobody liked it! I thought I couldn't go wrong with 600+ excellent ratings, but I was wrong! I followed the recipe exactly as stated and it was too sweet and too spicy (I love spice!). I used serrano peppers and I would recommend jalapenos to anyone who dares try this recipe. Most of my guests said that it lacked something, but we couldn't figure out what it was. Ironically, it was sweet and spicy, but lacked flavor! I would not recommend this recipe... Sorry, Bob! But, you have plenty of other fans!

Spaghettini Chicken

This recipe is really, really good! It has an odd soupy consistency, but tastes great. I couldn't decide whether to eat it with a fork or a spoon, so that's why I gave it 4 stars, but I definitely recommend it. I had fresh spinach that I needed to get rid of, so that's why I chose this recipe. I didn't have any onions on hand, but I doubled the garlic because I love garlic. It turned out great! Next time, I might try roasting fresh roma tomatoes instead of using the canned tomatoes, but it's definitely easier to make with the canned.
