Grilled Peanut Butter and Banana Sandwich
One of my all time favorites! Definitely use over ripe bananas for this. I also sometimes make something similar but without bread- just heat a mashed banana in a pan for 3-4 minutes, then drizzle with a bit of peanut butter and cook an additional 30 seconds.

Cheesecake Brownies
Made this for a dinner party and it got rave reviews! I only had 4 oz of neufchatel cheese so I mixed that with 2 oz sour cream and 2 oz. cottage cheese- may not sound great, but once blended it tasted fine. Its actually a great way to lower the fat and calories a bit!
