I did a few changes too using half amt. of butter, used light cream, 2 cloves of garlic which I will increase the garlic next time and add more pesto to the milk as suggested by another. Husband didn't think it was very flavorful but my son and myself really enjoyed it.

I loved this recipe, some how I forgot the mayonnaise while making this recipe and didn't miss the taste at all. I have made it 3X since then and still don't use mayo, and I cut the cukes down to 1 large since I eliminated the mayo. I didn't use salt to leach out the water either and it turned out fine.

I have been made this several times and I like lower sodium dried beef which I chop in my mini chopper put into a small baggie. I whip up the cream cheese so its easier to spread on the green onion. I spread the cream cheese with a butter knife then dip onion into the baggie of dried beef and lay on your plate..Makes a great presentation.
