Cabbage Soup II

Simply outstanding. This left my old cabbage soup recipe, which my husband wouldn't eat, in the dust. (He loves this one. He even called it his new favourite soup!) Thanks so much for the wonderful recipe.

Old-Fashioned Potato Pancakes

This was my first time making (or eating) potato pancakes and they turned out beautifully. I wasn't sure how to top them so we ate half with ketchup and the other half with a dollop of sour cream and a sprinkling of chives. (Excellent both ways.) Thanks for the recipe!

Fluffy French Toast

I found out too late that I was out of vanilla, but other than that, I followed the recipe exactly. It was excellent, the best french toast I've had. I served it buttered and sprinkled with powdered sugar, then topped with strawberries, blueberries, blackberries, and syrup. Yum! I will never have it any other way. (I can't wait to try it with vanilla.)

Quiche Lorraine I

Like other reviewers, I also found that this quiche took far longer to bake than the recipe stated. I think mine ended up somewhere around 1 hour and 10 minutes and it still wasn't set quite as well as I would have liked. (We took it out due to impatience. It smelled so good!) Even slightly underdone, it was so delicious that I know I will give it another try. Next time I will bake at 375, add an additional egg, and reduce the milk as others have suggested. (I also had the problem of too much filling and too little pie crust, resulting in some spillage. For this, however, I blame the so-called "deep dish" crust I used, not this recipe.)

Bob's Awesome Lasagna

Both my husband and I thought this was fantastic. I used the oven-ready lasagna noodles for convenience and I only made two changes to the recipe: I added a bit of garlic powder to the meat, and I took the advice of several reviewers and added an egg to the cheeses to make it hold together better. I didn't bother to drain the cottage cheese like some reviewers said you have to do and it didn't matter. Mine turned out perfectly! Not too dry, not too runny. This was the easiest lasagna I have ever made. I will make this regularly.

Old-World Cabbage Soup

Excellent! I always add a few cloves of garlic. I also skip the water since I prefer thicker soup and add additional broth as needed. Like some other reviewers, I don't bother with microwaving the veggies. My husband isn't a fan of cabbage so he doesn't really like this, but it's one of my favourites.

Banana Muffins II

Excellent and easy! I make these often. My method is to let the dry ingredients sit while I blend bananas, sugar, egg, and butter with a hand-held mixer. Once this is really smooth, I add a fourth banana broken into small chunks because I like having bits of banana I can taste. I also top the muffins with a streusel mixture before baking (1/2 C. white sugar, 1/3 C. flour, 1 1/2 t. cinnamon, 1/4 C. butter---cut to resemble coarse crumbs). I always use overripe bananas since they're softer and their flavour is more pervasive, and when I mix the wet and dry ingredients, I stir only until they're just barely combined. They come out fluffy and soft and very banana-y every time.

Artichoke Spinach Dip

I make this pretty regularly... it's sooo good! I use a few garlic cloves instead of garlic salt and I always serve it in a pumpernickel round loaf with the torn bread bits for dipping. Yum!

Orange Loaf

I hadn't had orange loaf since I was a child until I came across this. I've made it twice now, and it's easy and delicious, though I agree with some reviewers about the glaze being a bit much. Next time I think I will try to cook it longer to reduce it, as some have suggested. If that doesn't work, I'll just use less.
