Mom's Buttermilk Pancakes

Italian Sausage Soup

I tried to make this just as written, but my grocer's was sold out of great Northern beans so I used chickpeas instead (it was all I had on hand). I used the spicy variety of Italian sausage since we like heat. It was delicious. Definitely a keeper. Thanks for sharing.

Best Big, Fat, Chewy Chocolate Chip Cookie

I followed the recipe exactly, except that I used margarine instead of butter (it was what I had on hand). I ended up with 15 giant cookies, baked at 18 minutes per batch. I used the parchment paper option rather than greasing the cookie sheets. They turned out excellent. Thanks, Elizabeth!

Apple Squares

I have made this many times now and the pan almost never lasts more than a day in our house. I make it almost exactly as written except that I leave out the walnuts (allergies) and only put 1 t. cinnamon in the topping (just a matter of taste). This is definitely our new favourite fall treat. Thank you for the wonderful recipe!

Baked Potato Soup

Oven Fried Parmesan Chicken

Wow, was this good. I used eight chicken thighs instead of a whole chicken, but otherwise followed the directions exactly. Everyone loved it. Definitely recommended.

Cucumber Sandwich

These were wonderful. We followed the directions the first time and they were five-star sandwiches already (hence the rating). The second time, we tweaked them to suit our individuals tastes (more pepperoncinis for him, less avocado for me, a splash more vinegar for both) and enjoyed them even more. We'll definitely be making these again. Thanks!

Raspberry Lemon Muffins

These were absolutely delicious. I substituted fresh raspberries for frozen (mushing some of them a little first), but other than that, I followed the recipe exactly. They disappeared within a day in my house. I will definitely make these again. Thanks!

Chicken Fettuccini Alfredo

I made this exactly as written and prepped all the ingredients before I started. It's a bit too time-intensive to make often (which is fine since it's not exactly health food!), but it was easy and everyone loved it. Great leftovers too, and lots of them.

Big Soft Ginger Cookies

I was looking for a ginger cookie with the same taste and texture as the kind they sell in some coffee shops. For me, these were it. They were soft and chewy with a wonderful depth of flavour---neither crisp nor cake-like. I made them exactly as written, except for the substitution of orange juice for water that so many reviewers have recommended. Thanks so much for the wonderful recipe. I will be making these often.

Blue Cheese Burgers

My husband and I liked these. I made them exactly as directed. I also stirred a little blue cheese into some mayo and we spread that on the buns to further increase the blue cheese flavour. Topped with lettuce and thin-sliced tomato. Very tasty. Thank you.

Chicken Tortilla Soup V

As I was making this, I thought the veggies seemed a bit sparse and contemplated adding some bell peppers or something but I'm so glad I didn't. One taste silenced the skeptic in me. The flavour is just too good as it is. I don't want to mess with it. Can't wait to make this again. Thank you so much, Betty!
