I'm sure this would have been unbelievbly good as written. I opted to "health it up" a bit: for 2 loaves instead of 3...used 1/2-1/2 oil-applesauce, 1/2-1/2 white flour-quinoa flour, 1 c white sugar, 1/4 c brown sugar, ~4 tbs honey, whole can of pumpkin. Made a rich, dense bread.
