Single mom,started learning how to cook as soon as I found out my son was on his way. I love learning about cooking, watch all the cooking shows on TV, buy all sorts of cook books, look up recipes on-line, try recipies from packaging, anything really...Hope to one day be a great cook so I can whip up delicious things for the people that I love!

Eve's Chicken Quarters
I just made this; easy to follow recipe, very tasty. I took others' advice and used only 1 cup of water. I also used Lipton's Instant Rice; Chicken Flavored since that's what I had on hand. I also did light sour cream to cut down on the calories a bit. Next time, I think I'll season the chicken while baking at 1st, since it could use a bit more flavor, but overall good recipe. Thanks for sharing... will be making this again.

A Good Easy Garlic Chicken
This was awesome! Quick, easy & so delish. I followed MamaJudd's advice and used her gravy recipe and paired this with steamed shredded veggies. Great lunch. Will definitely make this again. Thanks for sharing!!!

Chicken Chilaquiles
This was so easy to make an so delish! I did not have all the needed ingredients on hand, so this is what I did: Had some shredded roast chicken that I needed to use up, so I used that instead of the cubed chicken & chorizo. I sprayed my casserole dish with cooking spray, tossed in crushed tortilla chips, a layer of my shredded chicken, a layer of canned corn and topped off with the green enchilada/sour cream mixture and 2 cups of shredded mont. jack cheese for 20 mins. My son could't get enough of it. We had this for brunch.
