Grandma's Easy Shells

I ended up with my grandbabies on a week day night and was wondering what I was going to fix for lunch since I hadn't been to the store and didn't have much in the house that they liked. I made this and they loved it. It was fast and easy and better than taking them out for fast food. I did add a few other spices but I usually do that with most recipes that I find here on AR to our preference. As far as most kids I know they prefer simpler recipes to the more refined taste of adults. Thanks for the post!

Cheesecake Pops

Loved these. Instead of using a scooper I used a little non flavored pam on food plastic sanitation gloves that you can get at Sam's etc. and rolled them into balls. After making all the balls I then put on new gloves and rolled them into the mixtures that I had prepared ahead of time that we like, used flat hand of palm against top and inserted sticks to the other end then put in fridge. Made prep time so much easier and everyone loved that they could have there own favorites without having to make twenty different cheesecakes. Thanks so much for the post.

Bacon Mushroom Chicken

This was very yummy, my husband loved it. The only thing I did different was to use boneless, skinless chicken breast and put the mushrooms on the chicken first, then cut the bacon in half and layed it width wise over the mushrooms and secured to chicken with wood toothpicks soaked in water. Kept everything together and the bacon was nice and crisp. Just remember to remove the toothpicks from the chicken before serving. Came out moist and delish. Loved the sauce.

Snapper with Linguine and Citrus Cream Sauce

We actually cooked the marinated snapper on the grill tonight so didn't mess with the flour etc. The only thing that we added to the sauce was some garlic. Turned out very very good. Thanks for the post.

Muenster-Bacon Stuffed Chicken Breast

Though I did things a little different, this recipe looked so good that I really wanted to try it without all the fat content. This still came out very good. I used the recipe for cooking bacon in the oven from this site, bacon for a crowd which I must say I think is wonderful, make sure you use a pan with sides for the drippings, or check out the reviews for some great tips. Though I do use the thick bacon I think this could do well with thin bacon if the heat is cut back and watched carefully. I also have used parchment paper and overlap the bacon so it curls less. Add parchment or foil to the top so it don't splatter. Heated olive oil in a skillet and browned both sides of chicken then put in oven to finish. So yummy. Thanks so much for the post.

Quick Potato Salad

We love potato salad and though we have our favorites are always on the look out for something new. This was pretty good, but I would go with dill pickle or relish in place of the cucumber for a little added flavor. Also, I like to add a little paprika for the color. I think I would also use a red onion or green onions just because the yellow onion I used was really potent, could be I added a little to much, but the onion flavor was very strong. Thanks so much for sharing.

Horseshoes

These were very good, we live about 45 miles from Springfield and go there often and love the different diners etc., and always buy horseshoes wherever we decide to eat. Some are better than others and unique in there own way. Some use turkey, ground beef etc., I have replicated them at home and they come out pretty good, I do make homemade fries though, just think they taste better. These are very good though, and thank you for the post.

Rosemary's Burger

Sorry we did not care for this. I was looking for a little something different to jazz up our burgers so used a lean meat to off set the fat content with using the butter. It could be we just don't care for the taste of butter in our burgers. And I do like butter vs. oil in a lot of dishes that I cook, just not our burgers. I would rather use a higher ratio of fatty ground beef for flavor than butter. I must say though that I will play around a little bit with the rosemary and some other spices to perk up our burgers a little more for flavor in the future. Thanks for the post.

Caper Baked Chicken

I ended up straying away from the original recipe since I didn't have all ing. on hand. I subbed hot sauce for the steak sauce and it turned out very good. I do plan on trying it with the steak sauce and also giving it a go with Heinz 57 sauce.
