Corn and Crab Bisque
This was tasty. I doubled the recipe based on other reviews, but the leftovers were not as good as the first bowl.

Poblano Chile Enchiladas a la Gringa
I tried to do a "healthy" shortcut by not pre-frying the tortillas and they fell apart and were a little soggy as a result. Next time I'll follow the recipe exactly- the flavor was wonderful!

Oven Baked Jambalaya
Well worth the effort! I had one woman beg me for the recipe, her husband couldn't get enough of it!
