Easy Shake and Bake Chicken

My family really liked this. I added some cayenne red pepper and garlic powder to the flour mixture kick it up a notch. I had whole bone-in chicken breasts which I used.

Hot and Sour Chicken Soup

I had cooked chicken on hand, so I just used that. I used homemade chicken stock, and probably used almost double the amount of broth. Easy to ,ake and very good.

Spooky Witches Fingers

These were the bomb for appearance - they look just like the picture. I thought the dough wasn't sweet enough so I mixed in about 1/2 a cup of granulated sugar and 10 drops of green food coloring to give the fingers a greenish tint. I baked for about 12 minutes. Then I added a little bit of strawberry jam (lift offf the almond and then put the jam on then replace the almond) on both the top and bottom of the finger. Squeezed a little of red food coloring on top of that. I took them to a party and everyone loved them. Thank you for the recipe.

Pear Pie III

I doubled the pears, and added a sprinkling of brown sugar and cinnamon on top. Everyone thought the pie was goos, just lacking in flavor. My husband suggested soaking the pears in brandy before baking??

Easy Fruit Cobbler

This was certainly a very easy to make and tasty cobbler. I modified and used 1/2 cup white flour, 1/2 cup whole wheat flour, only 1/2 cup sugar, and used 1 tblsp. lesss than 1/4 cup of butter. I used about 1 1/2 cup peaches and 1 cup blueberries. Then I sprinkled about a cup of Kashi Go Lean Crunch cereal on top (before baking) for a fiber boost. My kids scraped the plate clean, but my husband said although it was good it tasted healthy and wasn't as good as a regular made cobbler. It's good the next morning for breakfast leftover.

I am only rating this because I can't keep track of what I make and try and don't make. In all fairness to the recipe, I didn't have the shrimp, tomatoes, or mushrooms. So that would have probably made the recipe better.

Penne Pasta with Spinach and Bacon

All of my family really liked this pasta dish - including my seven and 14 year old. I used whole grain pasta. I also baked the bacon and didn't use any bacon fat to cut some of the fat out of the recipe. I just used olive oil as called for, and it was fine. When I served the pasta, I put out some goat cheese, gorganzola and parmesan cheese. Everyone put a small spoonful of one or more cheeses on their pasta bowl. It was delicious. Thanks for the recipe.

Good Old Fashioned Pancakes

Thank you for sharing this delicious recipe! Easy to make and wonderful. I did use 1/2 cup whole wheat flour and 1 cup white flour. I also added a smidgen more milk and 1 tsp. vanilla. I added some frozen blueberries to half the batch. The whole family enjoyed on Easter morning.

Teriyaki Flank Steak

Wow! I didn't have fresh ginger so I used ground ginger (about a teaspoon because I didn't wan't too overwhelming of a ginger flavor). I sliced a cheaper cut of meat (london broil on sale!!) and let it marinade all day (included a sliced up onion with the meat) and then broiled it for dinner. Everyone, kids included, loved this recipe. Thank you!

Easy Grilled Tri Tip

I doubled the sauce - let marinatye for a few hours. Didn't have time to slice, or access to grill. So baked in the oven on low (325 degrees) and then finished off under the broiler. Sliced and servved. My family really enjoyed! Do not overcook the meat if using this method (Sorry - I can't remember exact baking times).

The Best Rolled Sugar Cookies

These cookies held their shape beautifully! I have always made a Betty Crocker sugar cookie recipe that adds cream of tarter, powdered sugar, and almond extract. I foun these easier to make (didn't need to grease the cookie sheet), and delicious as well. I also turned the oven down as noted by another reviewer - about 385 degrees for 6 to 7 minutes. I also made my frosting a little thicker (using milk, powdered sugar, melted butter and vanilla).Used heart shape cookie cutters and pink frosting - great for Valentine's Day. will use this recipe again!

Apple Oatmeal Crisp

I tweaked this recipe a bit to make it healthier. My family enjoyed it a lot. I used whole wheat flour in place of white flour; instead of 1/2 cup butter (which is 8 tblsps.), I used 6 tblsps. butter and 1/4 cup applesauce added to the flour and brown sugar and oats. I also cut back to about 1/4 cup the white sugar. I baked for the first 30 minutes with a lightly covered piece of foil on top, and then removed the foil and continued baking until done. Thank you for basic recipe - very easy to make. I'm sure it's delicious as is, we are just trying to mkae every dish slightly healthier by making some simple changes to them. I reduced the overall fat, calorie and sugar content buy just a bit - but every little bit adds up!
