Vegetarian Split Pea Soup
This was an easy recipe I opted to use my slow cooker for this recipe. I presoaked the split peas for about one hour before to help them along, I followed the instructions as they were, and cooked the veggies, after that step I put all the remaining ingredients into my preheated slow cooker. I added an additional cup of vegetable broth and 2 boullion cubes. I liked the heat of the chipotle, but not the smokiness, in the future I would omit that ingredient and add cayenne instead. I cooked the soup for about 6 hours on a high setting.

Creamy Au Gratin Potatoes
I really enjoyed this dish, but didn't care for the onions in them, next time I will leave this out, otherwise its a great side dish.

Easy Vegetable Pot Pie
This was a fantastic meal, it was so easy, I also followed the advice of others and baked the pie shell for about 7-8 mins before I added the filling. I also added only half the thyme as I am not a big fan of that herb, but I subbed the thyme with dried basil. My husband who was very reluctant to try the recipe ended up loving it! Try this recipe its an amazing vegetarian recipe.
