Wheat Germ Whole-Wheat Buttermilk Pancakes
Yummy! I usually don't care for pancakes because I feel so heavy afterwards. No the case with this recipe. However, I used half the oil, added two tablespoons of flaxseed meal, and two tablespoons of honey. This is the first time that I have NEVER had pancakes stick to the griddle. My 3-year-old son ate the entire pancake before I finished making my husband's plate! I had left over batter, so I made a pancake for myself this morning. It was even better today. I used 50/50 diabetic jelly on top and it was perfect.
