Jay's Signature Pizza Crust

I would by lying if I said this wasn't so EASY and so GOOD. I got rave reviews from my sister, her boyfriend, and my own boyfriend. The only thing I did different is added some italian seasoning and some garlic powder to the crust. I also prebaked the crust for 10 minutes before I put on the toppings. It came out perfectly. I will never buy canned or boxed pizza dough again.

Golden Rum Cake

I used Bacardi Select rum. It was ok, but I wish I would have used Appleton's for the glaze. Don't get me wrong, the cake is still out of this world. I took the advice of others and poked holes in the top and bottom of the cake, then poured half the glaze into the bottom of the bundt pan and poured the rest on top. The cake itself is moist and divine. I will definitely make again, just with different rum next time.

Jalapeno Popper Spread

This dip is awesome. It's even good cold. I served it with both scoops and bread-most people liked the bread better. I didn't make it too hot, but next time, I will add more jalapenos. I also baked mine so the top got brown. It added look, but it was harder to rewarm that way. Overall, though, awesome!

Italian Grilled Cheese Sandwiches

This was a good spin on traditional grilled cheese. I thought it needed more garlic, but that's just me. Also,I added Italian Seasoning instead of just Oregano. It was easier and I thought it added a nice touch. Quick, cheap, and easy. Could you ask for anything more?

Three Cheese Garlic Scalloped Potatoes

This recipe disappointed me. These were more of an au gratin potato and not scalloped potatos. I love cheese and garlic, and the flavors were good, but just not what I expected. Also, the potatos were not nearly done after 1 hour. I should have baked an additional 30 minutes to see how that did. Oh well. It was worth a try.

Baked Scallops

I made this for my parents when they came to visit. They were amazed at the cook I had become! I had to admit to them that I found the recipe here. This recipe is simple and delicious. I used big scallops and cut them in half. A perfect meal.

Hot Pizza Dip

Awesome dip! I put mine in a 9x13 pan and put it in the oven at 350 for 30 minutes. This caused the cheese to really cook and brown. I think it made all the difference! I also added some italian seasoning and some garlic to the cream cheese mixture. Served with slices of homemade garlic bread.

Cathy's Banana Bread

I made 2 loaves--one with chocolate chips and one without. This cake is so moist. The only change I made was to use 1 cup of brown sugar in place of the 1 1/2 cup white sugar. A huge hit, a great recipe. Thanks.

The Best Meatballs

I modified this only slightly. I left out the veal (couldn't find it in the store), added more garlic and added italian seasonoing, added mozzarella in place of the romano cheese, added only 1/4 cup of milk to the mixture, and baked them at 350 for 25 minutes. These were flavorful, moist, and hearty. I think this recipe makes the best meatballs I have ever had. I served them with marinara sauce. Excellent!

Apple Crisp II

Oh my. Talk about the perfect fall dessert. I doubled the crust as other suggested, putting it on bottom and on top. All I can say is that this was a knockout recipe. Next time, though, I will use Granny Smith apples instead of Gala. Don't get me wrong, it was still awesome, but the Granny Smiths would kick it up a notch....

Baked Potato Soup I

This was good. I took the advice of others and used 1/2 the flour and butter and added in onion powder, garlic powder, cayanne pepper and parsley. It is a very versatile recipe. I wanted it to be creamier... Overall, though, still a good recipe and still worth keeping. Thanks.

Rempel Family Meatloaf

This meatloaf was so flavorful and moist. I increased the cheese by about 1/3 a cup. I made the brown sugar meatloaf the other week, and my office thought it couldn't be beat--this kicked it's butt out of my recipe book! Obviously will make again. I think next time I will add in some green peppers and onions to the mix. Thanks for a great recipe.

Mouth-Watering Stuffed Mushrooms

Brown Sugar Meatloaf

Before I moved South, I thought there was only one kind of meatloaf--wrong. There is this kind with more of a sweet and sour sauce flavor, then a straight up ketchup kind. As far as the Southern Style meatloaf goes, this one is awesome. I do, though, prefer a little more ketchup flavor, and will modify it the next time I make it. I used seasoned breadcrumbs instead of crackers, reduced the brown sugar (thank goodness!), and added worstechire sauce to both the glaze and the meat. I will admit, it is delicious, and I will definitely make again.

Caramel Popcorn

This is awesome--once you make it, you will NEVER buy the boxed stuff again. I followed the recipe exactly except I did what another person suggested and microwaved the caramel corn in paper bags for 30 seconds 4 times. The cleanup was ridiculously easy. A huge hit! Thanks.

Carrot Cake III

I followed everyone else's suggestions and used part applesauce, nutmeg, extra cinnamon, canola oil, pineapple, less powdered sugar, etc. It turned out FABULOUS. I was told it tasted like a $100 cake. It was so moist and delicious. I am making again next week for my best friend, who is a carrot cake expert. She won't be disappointed either. Thanks for the great recipe.

Banana Crumb Muffins

These muffins are unbelievable. The only change I made was using oil instead of butter in the batter. They were a huge hit with my family--most were gone before the rest of breakfast was even ready. Thanks for a great recipe.

Banana Pudding IV

I don't like bananas and I don't like pudding, but everyone I work with and everyone I live with LOVES it, so I made it. This recipe was a huge success with all. Half of it was gone before lunch--the rest was lunch! I followed the recipe exactly, except I crushed more Nilla wafers on top like suggested. I was told it was awesome and everyone wanted the recipe!

Garlic Chicken

I thought this was fine. I didn't have a lot of garlic flavor, and I don't know if I had marinated it a little bit in the olive oil/garlic mixture if that would have made a difference. I did flip them once during cooking so that one side was not soggy. I will admit, the chicken was very juicy and tender. I served it with a side of spaghetti with marinara sauce. It was almost like a chicken parmigana! I would make again, but I was just a little disappointed that it wasn't as garlicky as I expected.
