I am a stay at home mom of three kids. My husband's in the army and travel's alot. We,ve lived in Hawaii for three years and plan on staying at least another three more. I found a new passion for cooking when he got deployed for a year(from April 04' to April 05').I guess it kept me busy while he was gone but I found myself really enjoying cooking and having my best friend and kids be my guniea pigs. I enjoy pilates, yoga and kickboxing on my spare time as well as venturing off with my family on the weekends.
My favorite things to cook
I love cooking anything from Italian to Soul food. Ever since I had my last child(18months) I'm a little health conscious with food, but don't deprive myself. I can't say I have a particular favorite food because I make so many different things. My husband and I grill at least 3 times a week and I'd say our specialty is steak and pork chops due to our awesome marinade we discovered from living in Hawaii. I also enjoy making Kalua pig. Lately I've been making alot of finger food from dips, to working with phyllo dough.
My favorite family cooking traditions
Grilling a big dinner every Sunday.
My cooking triumphs
Making Spanikopita with phyllo dough.I've never worked with it before and it was a challenge at first, until I got the hang of it working quickly so the dough doesn't dry out. I finally got my husband eating something with spinach in it. It seemed like he couldn't get enough of it. Also, anything that I make and the kids love(since they're so damn picky), I know that a keeper.
My cooking tragedies
Cooking a large batch of stuffed mushrooms with low fat ingredients. I had to throw it out. Some things you just can't compromise with.
