Oatmeal Chocolate Coconut Chewy

Reviewed: Jan. 22, 2012
Ok so I'm reviewing late. Made these cookies for Christmas and they were wonderful! I used white chocolate chips as I was already making chocolate chip cookies, and as I already said, they were wonderful. Would definitely make them again. Maybe next time I will use chocolate chips...or maybe butterscotch? The possibilities are endless...lol!

Apple Bread

Reviewed: Oct. 30, 2011
This bread is very good, but mine was a tad dry for my taste. I added applesauce instead of oil, maybe that's why. Next time I will add 1 C of applesauce rather than 1/2 C, and add an additional 1 C of apples. I didn't add the walnuts, as I didn't have any.I used half white and half brown sugar and 1 1/2 t cinnamon and 1 t of apple pie spice as suggested by other reviewers. The flavor was good, just needed more moisture. I also added a crunchy topping from another recipe. The topping was super! I used 1/4 C of low fat granola, 1/4 C chopped pecans, 1 T brown sugar, 1/2 t cinnamon and 1 T melted butter. I will update my review after making the changes. I have high hopes for this one! Hopefully the changes will bring it up to 5 stars.

Hearty Ham Omelet

Delicious! I used 6 eggs, used pam instead of the butter and omitted the bacon to make this fit my diet plan. It was great. I also bumped up the cheese to 1/2 C as we love cheese. A keeper for sure!

Lentil Soup

Reviewed: Feb. 3, 2011
This was first attempt at making lentil soup. Actualy, my first time even eating lentil soup. I had heard from many people that lentil soup was good, so I decided to give it a try. I picked this recipe because of the ratings and because it looked to be both healthy, inexpensive, and easy to make. I did make a few changes. I ommited the oil altogether and cooked my veggies in pam to cut the fat. I also added knorr chicken boulion to the water and 1 small (8 oz) can of tomato sauce, keeping the liquid to 8 C. I used lemon juice rather than vinegar and used frozen spinach. (aprox 1 C) I had to add a little more water about halfway through the simmering time as the lentils seemed to be soaking up all of the liquid. All in all, this was very good soup. Very filling! Hubby liked it as well, so I will be making this one again. I am on the the Slimming World program and this soup, minus the oil, counts as a free food, which is great! I can eat as much as I like with no guit. Fabulous!

Porcupines

Reviewed: Jan. 23, 2011
Pretty good recipe. I pre cooked my rice and omited the water. I added 1 egg as the mixture seemed a bit dry. I tweaked the sauce as it was very plain, even with the addition of worcestishire sauce as suggested by another reviewer. I did not brown the meatballs, just placed them in the sauce and baked for about 1 hour covered and 15 uncovered. The meatballs were good, just a tad bland for my taste. Next time i will up the seasoning a bit to suit my taste and try a different sauce recipe. I will make this again using my changes.

YUM! Just made this for Christmas dinner and we loved it. It was simple and delicious. I added 1/4 t of cinnamon to my syrup, otherwise followed as written. A keeper! I love that it is for two as it is just hubby and I and most recipes make way too much for two. Thanks!

Sugar Cookie Icing

Reviewed: Dec. 26, 2010
This is a great icing recipe. Easy to make and work with. I did have to add a bit more milk and corn syrup though as my icing was way to thick with the stated amount. Not even icing really, more of a paste. Anyway, with the extra liquid it turned out great. Dried nice and hard so cookies were easy to stack for storage. I used the "soft christmas cookies" recipe from this site and was happy with both recipes. They work well together as the cookie wasn't that sweet and the icing was sweet. A good balance. I will use this recipe again.

Soft Christmas Cookies

Reviewed: Dec. 26, 2010
First just let me say that I do not make cut out cookies often at all. That said, I was pretty much flying by the seat of my pants, looking for a recipe that both tasted good and wasn't too difficult. I couldn't have been happier with this recipe. It was easy to put together and the dough was easy to work with after chlling. The cookie itself was not overly sweet, which was a good thing considering that they were going to be decorated with icing. I used the "sugar cookie icing" recipe from this site, which I loved. The cookies turned out soft and delicious. A great recipe!

Russian Tea Cakes I

Reviewed: Dec. 26, 2010
This was a very easy recipe. Basic ingredients that are always on hand, and goes together in a snap. I did not have any problem with crumbly dough like some reviewers. The cookies turned out fine.. A good cookie to have with coffee or tea. The cookie itself is not overly sweet which works out well with the powered sugar coating. A perfect balance. Looks great on the holiday table too.

Best Marinara Sauce Yet

Reviewed: Oct. 23, 2010
This was quick, easy and delicious! I have another pasta sauce recipe from this site that I love, however, it is a meat sauce and requires more cooking time. I wanted a meatless sauce to use for chicken parmesan and for the pasta I serve along side. I made some changes based on personal taste and what I had on hand. I used 1 28 oz can of crushed tomatoes (did not have stewed) and italian style tomato paste. 1T dried parsley, 1t dried basil, 2 t dried italian seasoning, 1 T brown sugar to cut the acidity, 3 cloves minced garlic, 1 bay leaf, water rather than wine ( did not have any wine) and cut the olive oil in half as 6 T seemed excessive to me. Using the crushed tomatoes eliminated the need for a food processor and worked out fine. I made my sauce the night before, which allowed the spices to really set in. My chicken parmesan was wonderful! I will be using this recipe again for ease of preperation as well as taste. I have grandchildren who love pasta, but prefer a meatless sauce, so this is definitely a keeper. Thanks Jackie...a real winner!

Chicken or Turkey Gyros

Reviewed: Sep. 11, 2010
Very good and easy, but did not wow me. Don't get me wrong, it was quite tasty but I had higher hopes being as the recipe came from Bobby Flay. I will probbly make this again, but next time I will toss the chicken and veggies together with the sauce before filling the pita for more even coverage. I think this concept would work well with any meat or poultry, mixed greens and creamy dressing. Endless possibilities.

Wisconsin Bratwurst

Reviewed: Sep. 9, 2010
These were pretty good. I had 1.25 lbs of sausage and used 1 tall can of beer and a large onion. I did not poke the bratwurst. I thought they were pretty good, but my hubby loved them. I would have rated 3 stars, but since my hubby loved them so much, I gave an additional star. I think I prefer the pre cooked bratwurst myself, but then, I'm a californian...lol! No offense to you wisconsinites out there.

Hawkeye Pork Roast

Reviewed: Aug. 15, 2010
This is fast easy and uses spices that I always have in the cupboard. I cut the onion and garlic powder in half and it is plenty for our taste. I also add 1 tsp of salt and 3/4 tsp of paprika to the rub. I also like to sear the roast in hot oil till nicely browned on all sides and add potatoes to the pan with the roast. Delicious!

Pink Princess Cake

Reviewed: Apr. 18, 2010
This is a very tasty cake. Good strawberry flavor, but could have been a bit moister. I used a 16 oz container of frozen strawberries, as I could not find any 10 oz containers. Next time I will leave the juice in rather than draining it. The recipe seems like it could use more liquid as it was a very thick batter. That being said, I will use this recipe again. Other than it being not as moist as I would have liked, It was a great tasting cake. Definitely worth making. Sprinkled the top with powered sugar and served with whipped cream and fresh strawberries on top. YUM!
