Lime Cilantro Rice

Reviewed: Oct. 2, 2009
Too lime-y for me but that is an easy fix! I will cut lime by half. Glad to find this and it was great with my Black Bean/Pork Tenderloin Chili. I put a couple scoops of rice in a bowl then ladled some chili on top. Ty for the recipe!

EXCELLENT! So easy to make too! I took Sunny's suggestion and added flat leaf parsley for color and freshness. I would highly recommend NOT cooking the mushrooms ahead of time as someone suggested as they cook up nicely just the way the recipe is. My girlfriends gobbled them up then broke out a loaf of crusty bread and sopped up the leftover scampi juices. Thanks Ambibambi!

Cream Cheese Pound Cake III

Reviewed: Apr. 9, 2009
I used 2 glass loaf pans. The tip I got for using glass was to cut the temp by 25 degrees. So I baked the loaves at 300 for an hour and 20 minutes. I started out with a cold oven, another tip I read. They were perfectly done! The only alteration I made to the recipe was I added a teaspoon of lemon extract. I did use the tip of having all ingredients at room temp. This was a GREAT recipe. So good and makes a ton. Froze the other loaf for next week.

Marinade for Chicken

Reviewed: Jan. 12, 2009
Ummmm, NO....Sorry, did this exactly as shown on the recipe. I make marinades all the time. This was way too salty and way too much Worst sauce. Sure citrus is going to make the meat tender and juicy, but I didnt like it at all. Red wine vinegar??? Apple cider vinegar would have been better. Im surprised at the great reviews. Made this for the first time and took to friends house, they were polite but we all had the same reaction. Sorry.

St. Louis Toasted Ravioli

Reviewed: Jan. 3, 2009
GREAT! The only thing better would be to hand make your raviolis at home. I use beef ravs, the cheese ones tasted funky to me. I also add crushed red pepper flakes to the bread crumbs. I great fresh parmesan on top of them before serving and make my own homemade marinara for dipping. Im from St. Louis and like taking this to people's homes here in Phoenix to give them a taste of THE HILL....

Shrimp Scampi Cheesecake Appetizer

Reviewed: Dec. 1, 2008
This was a great find, however I am altering it the next time I make it. There is WAY to much cheese for the amount of shrimp. I am going to do the following: add another pound of shrimp, add a couple cans of real lump crab, add another onion and carmalize them, add a little more garlic, use one smoked gouda and one regular, and call this Shrimp Scampi Rangoon. I made this for Thanksgiving and put them in the phyllo shells I made in the mini muffin pans. I made 4 dozen and still have half of the mixture left. I used the other half of the mixture the next day. I poured it in a glass dish and baked it. I got a lot of compliments on both and several people asked for the recipe. I dont think there is enough meat in it. When I was filling my phyllo cups I was trying to put a shrimp peice in each cup and I found myself digging around in the mixture looking for them. All in all this was good. It does make a ton, but it saves well in the fridge. Looking forward to the next time I make it!

Frozen Summer Slush

Reviewed: Aug. 17, 2008
This tastes like a DREAMSICLE or an orange push-up! This was good, very sweet. I thought the sprite made it too sweet. Club Soda was better in it for that fizziness. I did put in a cup of vodka ontop of the 2 cups of gin. Everyone still asked if there was alcohol in it. You really cannot taste the alcohol at all. The biggest fan of this punch hates gin too! Thanks for the recipe, it's printed and in my recipe drawer!

Overnight Cinnamon Rolls I

Reviewed: Aug. 9, 2007
I would say I was so happy to find something I could make in advance, overnight. Mine ended up on the dry side, although the neighbors loved them. I tend to undercook when I bake but it didnt work this time. I will blame it on the weather or the Phoenix climate. I used the cinnabon recipe for the icing, which went over great. Will try again.

Jalapeno Poppers of Champions

Reviewed: Aug. 5, 2007
Could these poppers BE any better? I did make with bacon and there are 2 tips I have to offer when using real bacon: 1) Cook at 375 to 400 for about 30 mins, depending on how crispy you like the bacon. (at the 12 minute mark using 350 degrees, my bacon was raw) 2) Use a fatter, rounder cocktail toothpick and soak them in water for about 30 mins before using so that the bacon grease doesnt burn them in the oven. I will be making again. The men last night devoured these in about 20 minutes. So simple and so good!!!
