I am a stay at home mom with 2 small kids. I love it and really appreciate that I get to stay at home--my husband works a ton so we thought it was important that one of us be at home with the kids!

My cooking tragedies
Before I was married I made lasagna for my soon to be husband--his mother is Italian--what was I (a german girl) thinking?? Anyways--I forgot to boil the noodles and they were NOT the kind that you could do that with so we ended up with crunchy lasagna! After 15 years of marriage, I still hear about it!!!

Slow Cooker Pineapple Pork Roast
This was very tasty and so easy to make! I will deintitely make again. Husband liked it and the kids ate it and didn't complain--so it's a keeper in my book! I did add some brown sugar to the pineapple cranberry mix--we like everything sweet! It deserves 10 stars for how easy it was to make!

Chantal's New York Cheesecake
This is a very easy cheesecake to make. I made it for a friend's birthday and everyone seemed to love the taste. However, I was somewhat disappointed that even after following the directions to a tee and doing a water bath--the cheesecake had a HUGE crack!!! Definitley NOT very pretty! I will definitley make again but not cook as long as the edges also turned a little too brown--I am sure it's just my oven!!!!!! :) Overall a very easy and delicious cheesecake--just wish I could figure out what to do to keep it from cracking! Any suggestions are appreciated!!! :)

Cinnamon Roasted Sweet Potatoes
I liked these sweet potatoes but still LOVE the old fashioned candied sweet potatoes which of course are slathered in butter and brown sugar. I am sure these are a much healthier alternative. Easy enought to make but I had WAY to much oil?? I would definitely cut back on the oil and just moisten the potatoes with it. I didn't use the lime juice--didn't have any but perhaps that is the secret ingredient? I may make again but cut back on the oil. Thanks for a good recipe!
