Four-Bean Taco Chili

Um, Yum!! To start with, how easy are the instructions? Brown beef, add rest of ingredients. I can do that! The ingredients? If you don't already have most of these in your cupboards, you can easily pick them up and know exactly what you are looking for. I made one change (I know, I hate it when people do this), but it really is about preference. I HATE tomato paste!! So, I exchanged it for Ro-Tel tomatoes and decreased some of the tomato juice. Also, this is not an overly hot-spicy chili, as written. It was just right for my no-spicy taste buds. But can be easily adjusted for those who prefer more kick! This is a keeper!

Coconut Cream Cake I

This cake was very rich. I wish I had read that others only used half the cream or omitted the sweetened condensed milk. If I make it again, I will do that. My cake ended up kind of soggy and way too sugar-y.

Jen's Hamburger Soup

This was really quite tasty. The store did not have savoy cabbage, so I had to use bok choy. I also did not put the full amount of carrots in. I did have to increase the water as my veggies started to stick to the bottom of the pot. I also did not have flavored salt or garlic salt, but adding pepper at the end was fine. It is very hearty. My favorite part was the squash and while I did not measure it, I used a whole buttercup squash, so I'm sure there was more than 3 c. Definitly make again.

Tofu Parmigiana

This is so tasty! Yum, yummy. I did bake the tofu first (350 for 15 mins) and it also seemed like I needed more breading. Next time I increase the breading to 3/4 c.

Chocolate Toffee Crunch Bars

I'm not sure if there was not enough butter in the crust, or enough 'toffee' topping, but the outside inch of the crust did not hold together. The middle could be cut up and served, the edges fell a part. Still tasted good, just couldn't serve the whole pan.

My Baked French Toast

Very good. followed directions as written as I was really leary about soggy french toast from the original recipe. This recipe is very sweet and I found that I couldnt fit all the bread in flat and had to do some rearranging before I baked it so all of the bread had the egg marinade.

Cake Balls

The taste is very good, but I had to follow other recommendations outside of the original recipe and they still were not very pretty. I let the cake cool for 30 minutes before mixing with frosting. I used a cookie scoop to make the balls and placed the balls in a mini cupcake tin to freeze for about an hour. Dipping them was not easy. Mine did not stay on the skewers when dipped in the chocolate. They also left cake in the chocolate, so the white bark was not clean looking, the chocolate bark hid it better.

These are good. VERY filling. Followed recipe to an almost T, I cut the chiles in half because I'm not a fan of spicy food. They were still too spicy for this swede!

Butternut Squash Soup II

As written, which is the recipe I followed, it was too bland. Maybe it could have been my low sodium stock, but I was far from impressed. After adding curry, nutmeg, ginger and some sour cream, the flavors were enhanced and so yummy. So as written, did not care for, with additional spices, very good.

Special Buttercream Frosting

Followed recipe as written. Very good. I add unsweetened cocoa to a portion of the the frosting and that was even better! It covered a two layered 8 inch round cake and 24 cupcakes and there was still leftovers.

Marshmallow Fondant

Followed recipe as written. Much easier than working with store bought fondant. After having it in the fridge overnight and warming to room temperature, it was still a little hard to work with, so I put it in the mike for about 12 seconds and it become very pliable. I colored the fondant with gel coloring before refridgerating. It did end up killing my mixer. Probably not enough amps, but this was some tough stuff before the kneading. Rolled it out using shortening the next day and it worked fine. Flavor obviously much better than fondant.

German Chocolate Cake Frosting II

LOVED THIS (and I have never liked german chocolate cake)! Made this for a friend's birthday. I substituted brown sugar for the white sugar to give it a browner color and did add some corn starch.

Chow Mein Noodle Casserole

My mom used to make something like this when I was growing up. Very tasty. Good for leftover lunches also. I did use cream of mushroom soup.
