Spicy Squash Casserole
Can't eat spicy food? I made this recipe without the jalapenos, using Italian-seasoned bread crumbs for the topping instead of crackers. I was afraid it might be too bland, but it is now a new family favorite!

Squash and Zucchini Casserole
I never follow a recipe exactly, so I shouldn't be rating this, but it was great. I actually made this with a mexican-blend shredded cheese in place of the romano cheese, went a little heavier on the tomatoes. It was quite luscious.
