Just as shortbread should be. I followed recipe except I did not have vanilla extract and used lemon extract instead. I must say I think I like it better.

Slow Cooker Chicken Cacciatore

This was great! My husband loved it and asked for it the following week. Because of the chicken dryness comments, I used chicken thighs. I also left the lid off of the crock pot the last hour to allow some evaporation of liquids and it was nice and thick.

I served this at my annual Hallalujah Brunch (the first day of school every year to celebrate the kids going back!) It was very easy to make, a huge hit and had many requests for the recipe.

Baked Potato Salad I

This was good. I modified and used cheddar cheese instead of american cheese. Omitted the black olives and added chives to the top. Served cold, it was a nice changed from our normal potato salad

Easy Toffee

This was super easy and delicious. I used non-stick cooking spray on my pan before placing the crackers down. The first batch I made came out great, but I only had them in the freezer for 20 mins. The second batch I left in the freezer for 30 and I had less breakage. I have saved the small broken peices for an ice cream topping.

Peach Cobbler VI

The pressure was on. My father-in-law put in a request for some peach cobbler similar to one he had tasted at a local restaurant. He described it to me and after reviewing many peach cobbler recipes, I found this one. Let me tell ya'll, it was a hit. He loved it and so did the rest of the family. I used fresh peaches from an orchard up the road.
