Tofu Caesar Dressing
Way too much garlic for a Caesar dressing. Served it at a family reunion and only one person would have more than one bite. Maybe with a lot less garlic and Worcestishire and the addition of an anchovy, this could be more like what we were looking for in a Caesar dressing.

Vegetable Salsa Soup
At first I followed the recipe exactly and I wasn't crazy about this soup. The salsa didn't seem to go with any of the vegetables I'd added. The next day I added a can of corn and a can of black beans and garnished with a dollop of fat free sour cream and it was okay, especially for a low cal soup. It's never going to be my favorite but I'd probably make it again with the same modifications and maybe cutting back on the carrots and celery some.

Curried Apple and Leek Soup
This soup was just okay for me. After the curry, I couldn't taste the apples at all and could barely taste the leeks. If I made it again I'd cut the curry back to 1 teaspoon, add more apples, and substitute sweet onions for the leeks.
