I'm only seventeen and I didn't think this recipe was difficult at all. I don't think "Starlet" read the directions very carefully because she seemed to have tried to poach her eggs under the broiler instead of on top of the stove. The broiler was for toasting the english muffins. Anyway, I love lemon, so the amount was fine for me. I didn't use any salt in this recipe. Thank you very much Avery, this was really good.

Ten Minute Enchilada Sauce

Mom made enchiladas tonight and the first thing I said was "there's something different about these and whatever it is, I love it! She said it was because she made her own sauce. Much better than canned!

Quick Coffee Cake

Mom made this as one of the desserts for my birthday party. I was too busy munching on everything else that night, but I did have this for breakfast the next day. Not overly sweet but lots of flavor. Liked it a lot!

Gourmet Tuna Salad Sandwich

I'm the tuna queen in the family and I loved this great sandwich. Although my friends think I am, I skipped the nuts. Capers and olives are my buddies, but I did rinse due to the high sodium content. Loved it; YUMMO!!!!

Peanut Butter and Banana French Toast

Every kid, from age one to one hundred and one will just love this combo!! As per another reviewer's subtle advice, I added a few chocolate chips. My daughter Tyler, who's seventeen, developed a peanut allergy only two years ago. Instead of peanut butter, I used her "soy butter", which tastes remarkably similar to PB. This product is somewhat new to the Northeast area and we were thrilled to find it. Schools even consider this to be allergy safe. My sweet pea loved this and I thank you so much for submitting it!!
