This was the best egg drop soup I have ever had and sooooooooo simple to make. My husband said he will never order egg drop soup in a restaurant ever again. I made the soup exactly as instructed (including the options). The only thing I did a smidgen different was add fresh chives and fresh cut green onions.

This recipe is excellent. We loved it and so did our neighbors. We ended up eating it a few days later, so, I do not know if that made a difference. We used russet potatoes. The only change I made was that I did not "dice" all the potatoes, but made some chopped and some a little bigger just to get some consistency. My husband (who does not want the same meal too close together) asked me to make it again within two weeks (that says something right there.)

This was the best broccoli cheese soup we have ever had. Before my husband even finished 1/2 of his first bowl, he said, "I hope you wrote this recipe down." I used only shredded sharp cheddar cheese and I added black pepper. We grow our own broccoli, so the home grown flavor does help. I have already made this three times and will continue to make it. This is a definite keeper.
