Came out delicious. Not difficult at all to grate the potato by hand, it was my first time. I will make this all the time rather than buying the frozen hashbrowns. Taste much better and I always need to use up leftover potatoes. I added my seasoning to the mixture before cooking and added only about 1/4 of an onion and still tasted wonderful. I really liked this version of stuffed peppers. I made everything according to the directions except I did not have Italian Seasoning so I substituted with seasonings I did have. Thank you for sharing!!
