Beth's Spicy Oatmeal Raisin Cookies

SO GOOD! added 1/4tsp more cinnamon and made some without raisins for the picky eaters. very moist and chewy. baked for 10 minutes, perfect. oh, and added 1/4tsp nutmeg, did not use shortning, used 1 cup butter.

Rhubarb Crumble Pie

wonderful! so easy and good. since i used frozen rhubarb the first time i made this, i did not add the tablespoon water. i plan on using real rhubarb next time. i also added more butter on top to brown up the crumble. the whole thing was gone within 10 minutes at the family get together. even my picky father liked it!

Spiced Banana Bread

So yummy! Not a strong banana taste, which I liked. I added some brown sugar in with the white sugar to make 1 cup. If I had had enough, I would have used all brown sugar. I also made only 1 loaf and then put the remaining batter into mini bunt pans. Baked at the same time. Bunt muffins were done in about 23 minutes. So Good!

Slow-Cooked Tamale Casserole

this was only ok. not really special or anything. very mushy, i used it as filling for tacos. i dont think it is anything that can stand on its own. the taste wasnt bad, just not anything to write home about.

Cinnamon Bread I

the bread itself turned out beautiful.the taste leaves a little to be desired. i followed all recommendations, mixing dry and wet ingredients separately, didnt beat for 3 minutes, used a bigger bread pan, and doubled the topping. i couldnt really even taste the topping in the bread (i put half in the middle) and barely any on top. was quick and easy to make and tastes ok. i also added raisins.

Ultimate Double Chocolate Cookies

i just tried one after it came out of the oven to rate this recipe and ended up eating 3! very good. i followed some others advice:used 2 2/3 cups semi-sweet choc chips, added 1/4 tsp to reg cocoa powder. did not use wax paper, let sit in fridge for 40 minutes. definitely watch the time on these, 8 minutes was just perfect for me. i thought the consistency was perfect and not too brownie-like at all (although i love brownies). i might add some choc chips for texture next time and more coffee granules, i did not get an "espresso" taste from this cookie that i was looking for.

Cranberry Muffins

very good and moist. i made these for a baby shower and did not use the cranberry sauce but an orange glaze. made them, froze them and defrosted them naturally. very good.

i remember this from years ago. my aunt would bring it to our family christmas in a bread bowl with bits of bread and veggies. this recipe tastes exactly how i remember my aunts!

Easy Toffee

my mother-in-law originally taught me how to make this, but didnt have a recipe. my husband loves it and i am glad to have the recipe so i can make it often! so good and easy. like someone else said, boil for a couple of minutes after melting butter and sugar together, this will help with the separation issue.

oh my goodness! these are good! like a spice cake with apples. i didnt have the cream for the glaze, so i just used milk and they were sooooo good. my family loves them. i might make another batch today.

Sweet and Sour Meatballs II

i love this easy recipe. i use frozen meatballs and just make up the sauce. i have used it for appetizers in a crockpot and for a dinner over rice and for meatball subs. good and versatile, made with pantry staples.
