Cake Balls

Reviewed: Oct. 28, 2011
These are delicious and easy, but after making them twice I have suggestions for them to turn out the best they can. The cake should cool completely before you break it into crumbs. Also, I use only half the container of frosting. My first attempt, I used the whole container and they were too soft and tasted too much of frosting, not cake. But using half the container they tasted of cake and were much firmer and easier to keep on the pop sticks for dipping. I used pop sticks instead of keeping them as balls. For easiest dipping, did your pop stick in the melted chocolate, then insert into your cake ball. Then procede with dipping the cake balls. These are such a hit with kids, and with adults who want just a little something instead of a whole piece of cake. Great for cocktail parties!

Orange-Ginger Tofu Triangles

Reviewed: Oct. 4, 2011
The flavor of the marinade was great, but it was too oily. I will definitely cut back on the oil next time. I would also recommend marinating it overnight and baking the tofu without having liquid in the pan. It will come out firmer, which I think is better for tofu. Baking as stated in the recipe, the tofu came out too soft for my liking. I thickened the remaining marinade with cornstarch for a nice sauce to serve at the table.

Zucchini Patties

My family loved these! I coated them in panko before frying and they were so crispy.I served them with marinara sauce. Next time I make them I'll be adding a bit of chopped red pepper and old bay seasoning.

Meatless Loaf

Easy, quick and delicious! I didn't use soup mix, instead sauted onion, garlic, basil, oregano and parsley and also added a couple tablespoons of steak sauce. Will definitely make this again!

Soft Sugar Cookies IV

Reviewed: Feb. 24, 2011
My family loved these cookies the day I made them but within two days they were crunchy, even though I kept them in an airtight container. I won't make them again since we can't eat them all the day they are baked!

Upside Down Pear Gingerbread Cake

Reviewed: Feb. 6, 2011
This cake was ok. The pear and brown sugar topping was really good, but the cake itself was lacking in flavor and a bit dry.

This pumpkin bread is a good, standard pumpkin bread. Very moist. I cut back on the cloves.

Vegan Red Lentil Soup

What an delicious soup! I didn't add fenugreek or tomato paste- didn't have them. I also upped the curry spice and served it with a dollop of chili garlic paste on top. Perfect for a cold winter day. Will definitely make this again and again.

Barbeque Tempeh Sandwiches

Reviewed: Jan. 13, 2011
I love tempeh and my homemake bbq sauce, so this recipe was great! Only one other reviewer mentioned cooking the tempeh first- it is a must! Tempeh in an uncooked food and heating it up in bbq sauce is not sufficiently cooking it. It must be simmered first or it is hard to digest.

Glazed Apple Cookies

Reviewed: May 3, 2010
These were really good. Nice and soft! I made some changes: used all butter instead of shortening, baked at 350 F, and left the butter out of the icing so it would set better. They are awesome!

New York Cheesecake III

Wonderful flavor! A big, beautiful cheesecake. I baked it a bit longer than in the recipe and chilled it for 24 hours and it still was too soft in the center, which made serving it a bit of a mess.

These were just ok. They wasn't really anything wrong with them, they just didn't have a great chocolate flavor.

Mark's English Sausage Rolls

I made these for a New Years day brunch, at the request of my English husband. One big change- I used vegetarian sausage (from Lightlife). They were great! Eveyone, including non-vegetarians, loved them.

White Chocolate-Cranberry Biscotti

Reviewed: Jan. 11, 2010
These were delicious! Not quite as dry and hard as some biscotti. A bit hard to slice after the first bake-be very careful, use a serated knife and go slow or they will crumble. Christmas guests loved them so much, I made more for New Years brunch.

Hoagie Dip

Reviewed: Oct. 15, 2009
Mixed feelings about this dip. I mixed all the ingredients except the mayo and tasted it and loved it! Then I added the mayo and was dissapointed- I just don't think the flavor of mayo goes well with hoagies. Philly hoagies are made with oil and that's what I'm used to and love. I may make this again, but I'll leave out the mayo and top the bread rounds with the mixture before serving, like a bruschetta topping, instead of serving it as a dip.

Buffalo Chicken Dip

Reviewed: Sep. 17, 2009
I made a couple changes to this recipe and I think it tastes better my way. I cooked two boneless, skinless chicken breasts and chopped them up instead of using canned chicken. Also, used 1/2 ranch and 1/2 blue cheese dressing instead of all ranch. I love this dip!

Cinnamon Coffee Cake II

Reviewed: Sep. 8, 2009
Delicious!! Very moist cake and sweet, crunchy topping/filling. I baked this in a bundt pan and sprinkled some of the topping into the bottom of a well greased bundt. It stuck a little so grease well if you do this. Next time i will definitely replace half the oil with applesauce like other reviewers did.

So simple and absolutely delicious! With a recipe this simple, you need the freshest, ripe tomatoes and fresh basil. I added minced garlic.
