Me and My Baby Boy
About this Cook
I am a mom of one special needs little boy...he is my angel. I have started working part time which allows me more time to experiment with dinners. I love good food, good wine, and good friends and family!
My favorite things to cook
FOOD!!! I love food...I love to cook food...the more the marrier!!! Ultimately I love those quick recipes with few ingredients that just make your mouth say YES YES YES YES YES!!!!
My favorite family cooking traditions
Much to my dismay there isn't much cooking tradition in my family. My grandmother was an amazing cook...but the only thing I took from my short time with her was her spaghetti...which I have made my own over the years.
My cooking triumphs
My spaghetti is rockin' (according to my SO). I make some pretty mean burgers (both beef and turkey)...and I love to experiment with burgers, constantly trying to make them more fun, more interesting, and more mouthwatering!
My cooking tragedies
UGH...too many to name!!! :-P

Bacon Chicken II
This was very tasty. I didn't use the second pouring of sauce and I added cheese on top at the end and let it melt on. It was a little greasy but most of that stayed in the dish when I removed the chicken. Personally I think the flavor was very good...and the family liked it alot. My very picky son even ate a second helping...I love recipes that he will actually eat.

Mustard Crusted Tilapia
Outstanding...really! I am actually beginning to LIKE fish. I modified just slightly. I didn't have spicy mustard so I used 1 tsp of dijon mustard and 1 tsp of honey mustard. I also sprinkled some extra parmesan along with the bread crumbs. The family loved it...I loved it! Really wonderful!

Chicken A La Yummy
Hubby liked it. The kid was okay with it at first and then wasn't thrilled as he continued eating. There was something missing...not sure what yet...will have to work on it. It was good though. I used a local Pinot Noir that I happened to be drinking this evening.
