I think I have a new all time favorite dessert! I didn't even know I liked Carrot Cake, but I thought it would be appropriate for Easter, so I made one. The only problem was I completely messed up the recipe. I was following the suggestions of other reviewers, I did 1 cup white sugar, 1 cup of brown, 3/4 cup oil, 1/2 cup applesauce, and extra teaspon of cinnamon, and a teaspoon of nutmeg, and used walnuts instead of pecans--so this portion of my recipe was right, but somehow the main recipe had been adjusted to a half batch, so the rest of my cake was only half the ingredients--half the flour, half the carrots, half the egg, half the baking powder/soda/salt, etc... I realized it when I went to make the frosting and fretted all day on what the result of this cake I was serving for Easter was going to be. Surprisingly, it was an amazing mistake! It was the best carrot cake I have ever had, very moist, very sweet, and very delicious! I also slightly altered the frosting. 3.5 cups of powdered sugar and 1/2 cup brown sugar. It was EXCELLENT! Everyone that ate it LOVED the whole thing. So, if you like a sweet cake, give my mistake a try. You won't be disappointed.
