Crunchy Rice Casserole
Yummy! Quick and easy when you need a dish to throw together. I used 96% fat free beef, brown rice, skim milk, 2% cheese and healthy request soup to cut calories and make a little healthier. I also used the french fried onions on top as someone else had posted since I didn't have any corn flakes. (Of course, I used sparingly!) Kind of tastes like stuffed peppers. Thanks for sharing!

Chicken Pot Pie VIII
Excellent recipe! I never make crusts, so I was afraid to try it, but it turned out great! I took the suggestions of others and doubled the crust to have two pies. I froze the second pie and when we ate that one, it tasted just as good as the first night. I didn't measure, but I did add extra veggies as well as peas. I also boiled the potatoes for a bit before adding and they turned out lovely. My hubby also loved. It got his rarely given "It's a winner!" review! Now, if we could only make a crust without lard, we would eat this every day!

Golly Gee Gluten-Free Pancakes
Another great alternative for those of us needing gluten free! I tripled the recipe as it only makes 3 small pancakes. Then, I put the others in ziplocks in the fridge for instant breakfast during the week.
