Apple Lettuce Salad
Loved it. Used a honey crisp and grannie smith apple. I put the leftover dressing into a chicken/pasta salad the next day for a different swing on pasta salad.

Butter Chickpea Curry
My first attempt at Indian cooking and it was a success! I think my pototoes were too big so I wish the recipe had an amount that just a listing for potatoes. I found the specialty spices at the co-op and Penzey's had them too (I'm lucky enough to live in a town with a store). This recipe also freezes well. there was soooo much food! I served it with Naan and a tomato, feta, cucumber salad.

Chipotle Tilapia Tacos with Mango-Cilantro Salsa
Wow, that was too hot. I even decreased the rub to 2T. It tasted good, but when your whole dinner group can't eat if from the heat, that's a bummer. I dropped the rice too--add more mango to the salsa if the fish is too spicy. Helps cool the mouth!
