WONDERFUL! Even with one egg (I wouldn't advise), because one egg was all I had. It crumbled some, but the flavor was perrrrrrrrrrfect! Make sure to have those 2 EGGS!!!

Shrimp Scampi Bake

AWESOME! Couldn't stop eating it! I think you need to be a dijon-lover to fully appreciate! I used only half the amount of butter, and it still made a LOT of butter sauce. So I froze the leftover sauce, which I will use later on some fresh filet of salmon! MmmMMm...can't wait!

Spiced Beef Stew

Very tasty! I did leave out the beer! When seeing the recipe, I had never heard of brown sugar in a stew before, so I followed everything except for the beer. The brown sugar added a nice flavor. I added extra beef bullion in place of the beer. Along with big, fluffy biscuits, it was an excellent dinner!

Seven Layer Tortilla Pie

Great addition for our "Cinco de Mayo" dinner! The tortillas didn't get that "soggy, gooey" texture like some do when baked. It was a hit. Hubby was upset there wasn't any leftovers that he could take to lunch on Monday! It made plenty, though! Thanks!

Paprika Chicken with Mushrooms

I thought this was excellent! I'm used to a Chicken Paprikash with cream, but this is a good way to have that good paprika flavor without the fat and calories! I will definitely make again, but I will try to make more juice, perhaps by adding about 1/2 cup of chicken broth! Need lots of good juice to top the egg noodles or spatzle I serve with it! YUM!

Baked Dijon Salmon

ABSOLUTELY FANTASTIC! I didn't make a LOT of fish (wished I did), so I had a lot of mustard sauce leftover. I am planning to use it on chicken, with the breadcrumbs, the same way! Salmon is my absolute favorite, and I was a bit worried that the mustard might be too much for it. I made sure it was only a thin layer, and it turned out PERFECT to both my husband's and my tastes! Thanks for the recipe!
