Fish Chowder II

Very tasty, and so quick to make. I cut water and milk back, added prawns, and thickened it. I also added the grated carrot, as suggested for color. Superb, and rated 5 stars by all who ate it.

Buttertart Squares

Butter tarts are such a nuisance to make, and my husband insists on them at Christmas. These turned out so well, and are so easy, that I'm hoping he'll let me get away with them at Christmas. I did change the brown sugar to 1 cup only, and they are sweet enough.

Peppermint Meringues

Wow, I've never made meringue except for pie, this is easy and very tasty. As soon as the first batch has cooled (I had to try one before it was ready) I'm making a second batch for neighbors. I piped them out af a plastic bag, and I know the second batch will look even nicer now that I have practiced. I didn't change a thing, and they are pepperminty enough without adding peppermint extract as some did.

Scalloped Potatoes II

This is just like my Mom made, perfect. I did add 1/2 a large sliced onion, for my own taste. Note - I used large, smooth skinned russets, and employed my apple peeler, slicer, corer. I had to cut the potatoes in half crosswise so they would fit, and the time saved was amazing, plus the slices were beautifully uniform. All I had to slice was the 'cores', which only took a few seconds.

Corn and Cheddar Chowder

Nothing wrong with this chowder, though it isn't one we could eat often, maybe once or twice a winter. It is very filling, with an unusual but pleasing blend of flavors, and my husband liked it even more than I did.

Spaghetti Pie III

I added garlic when browning the ground beef, cut back a bit on the pasta,and added some mozza with the cheddar, otherwise followed the recipe. (Except I forgot to cover it while baking, and it was fine.) It was pretty good, and as it cooled on my plate it got better! Maybe I'll let it stand 10 min. instead of 5 min. next time.

Texas Hash

This makes plenty, I put it in two 8" square pans and froze one. Of course you don't have to use instant rice, I used regular long grain, because you cook it first so either one works. It seemed like a lot of chili powder for my taste, so I cut back on it and added some cajun seasoning instead. All in all, I'd make this again.

Thin Egg Pancakes

This is wonderful, I made a blueberry compote as suggested by one reviewer, rolled the pancake around it, dusted it with icing sugar, and no syrup was needed. Old fashioned, regular pancakes hold no appeal for me now.

Taco Pasta Salad

We had this on a cold January night with cottage cheese, and it was a nice change from typical heavy winter meals. And it was enjoyed by all. With the pasta in it I now know why other taco salads seemed to be lacking something. This was perfect. (I ommitted the green pepper.)
