Santa's Whiskers I

Reviewed: Dec. 15, 2009
Great cookies! I have been using this recipe for years, - but there are a few tricks!!! Cream butter, sugar, add vanilla then milk. Stir well, add cherries and pecans (don’t stir until you add the dry ingredients)) Mix dry ingredients in another bowl… then add a bit at a time to the wet mixture while you stir. Once you add the last bit - knead the dough with your hands. If the dough doesn't stick well, add a tiny bit of milk at a time until you get a good form. Break balls in half… and roll into 3 inch logs, then roll the logs into the coconut (if you want a better coating of coconut… brush the outside of the dough logs lightly with milk before rolling). You can freeze this for a couple of hours - then slice and cook, but it's best sitting in the fridge over night. The tip to not get the coconut to burn, is to slice the cookies very thinly (approx 1/4 inch), and either line your cookie pans with silicon sheets or parchment paper. Keep an eye on the first batch until you know the desired time! Recipe says 375F… I say 350F! Check them at 10 minutes, then add a couple of minutes to that (if needed). You want the bottoms golden, not dark - and the cookie should still be a little moist… Leave them on the pan until they cool (they will finish cooking this way)

Bacon Wrapped Dates Stuffed with Blue Cheese

Reviewed: Dec. 1, 2009
Fantastic! I made these for a potluck today and they went fast! I made 1/2 with blue cheese and 1/2 with goat cheese - and both were loved! Thank you! Oh! And my husband (aka Mr "I'll die before I let a nasty date pass my lips") was woofing them down last night before he had any idea what they were!!

Quick Tuna Casserole

I was skeptical when I saw the recipe, but I knew I had to throw something together for a quick dinner yesterday. Everyone loved it. I doubled the recipe for a family of 4 for dinner and leftovers for the next day (today).

Baked Kale Chips

Reviewed: May 7, 2009
I LOVE these. I first tried them and even though I followed instructions they had burnt - and tasted awful. I didn't make them again for a couple of months. But now to prevent them from burning, I place parchment paper on my cookie sheet and bake at 200F until dried out. They're super tasty!

Tasty BBQ Corn on the Cob

Reviewed: Mar. 15, 2009
Excellent recipe! Here's a tip for some of you who thought it took too long and was too soggy. Pop the corn cob in the microwave for 5 - 6 minutes to partially cook them. Let them cool, then follow recipe as stated. After cooking time, take off the foil and place directly on the grill, use a basting brush to brush any remaining butter mixture on it as the corn browns a bit. Yummy yummy. Thank you for posting this recipe

Super-Delicious Zuppa Toscana

Reviewed: Oct. 15, 2008
This is the best soup recipie I have ever had!!! I had to make changes according to what I had at home. I did not have Chicken broth - so I mixed 10 cups of water with 5 boullion cubes! I didn't have enough potatoes - but it worked nonetheless. I had white potatoes, next time I will use Russet - they hold together better when cooked. I didn't have heavy cream - but used "coffee cream" (I think it's the same thing actually). No spinach on hand, but had some kale - delish. It is now our new favorite recipe. Thank you for posting!

Slow Cooker Chicken with Mushroom Wine Sauce

Reviewed: Aug. 30, 2008
Excellent! Made this last night for a family get together meal. To cook the chicken faster, I cut it up into strips. I didn't have any dried onions, so I cut up a medium onion and used that. As well as fresh mushrooms and fresh garlic. Thank you :)

Japanese Chicken Wings

Reviewed: May 4, 2008
This recipe was delicious!! I was almost ready to toss the whole batch while it was cooking because of the overwhelmingly powerful smell of vinegar...But I made my guinea pig (hubby) try them first. I was shocked when he liked them. My super picky son gobbled half a dozen... he HATES meat of any kind!! I loved them myself. Don't let the powerful vinegar smell freak out you when it cooks!!!

Oven Fried Chicken III

Reviewed: Feb. 14, 2008
Very nice!! I didn't have a full cup of bread crumbs (and I only had italian seasoned), so I used 1/2 cup of crushed cornflakes to make up for it - and BOY did it turn out great! I mixed the dry ingredients and poured half onto a large dish. Instead of dipping the chicken into the mayo, I used my hands to rub on a very thin layer. (I only used about 1/4 cup of light mayo). Placed the mayo rubbed chicken onto the breadding then sprinkled the remainder of the chicken with the rest. It started preparations sooner than I should have so I let it sit for about an hour... well this may have been the ultimate secret to keeping the breading from falling off during baking! The chicken came out perfectly crispy, tender and delicious! Thank you! Will try with skin off next time :)

Mustard-Glazed Ham

Very nice! I cooked mine at a lower temp because my oven tends to cook hotter than others. Nice flavor which does not overpower the natural ham taste. Thank you!

Spicy Grilled Shrimp

Reviewed: Jan. 9, 2008
By far the best shrimp recipe ever. I made this 3 times since finding this recipe, and I'm reminded every time how YUMMY it is. Unfortunately I haven't had the chance to try it on a BBQ, will do so this weekend. But if you spread the shrimp out on foil lined (no cleanup!) baking sheet on the top rack under the broiler for 4 minutes (flip after the first 2) - it's still AWESOME! My son who HATES spicy food loves it, and I even caught my cat stealing a piece off the plate when my back was turned. The darned cat sat there and gave us the "I'm starving to death" stare the whole time we at dinner.

Upside Down Turkey

Reviewed: Jan. 1, 2008
Upside down turkey is the best. I did the following adjustments. Stuff the cavity with onions, carrots, celery and parsley (not to eat). After rubbing the turkey with butter, place (breast side down) it on a raised folding rack in the roasting pan. Crack fresh sea salt and pepper on top. Leave throw the giblets and neck in the bottom of the pan and pour a whole can of beer into the bottom. Cook 30 minutes at 400 F Lower temperature to 350F and cook an additional 2 hours Lower temperature again to 250 and cook another hour to an hour and a half. (you can flip the turkey over during this last part to brown the breast). Use a thermometer to check to see if it's done. Remove turkey from oven and cover with foil until ready to carve :) I followed the same gravy technique - but the beer makes the flavor explode in your mouth!
