Jalapeno Cranberry Sauce

Baked Lemon Chicken

This was an easy and tasty base recipe! My marinade was fresh juice of 2 lemons and some olive oil. I seasoned it with sweet paprika, dehydrated onions, garlic powder, salt and pepper. I made my own bread crumbs with butter crackers in the food processor. Baked according to directions, and made spaghetti with marinara sauce to pair with it! It was simple and delicious!

Banana Pancakes I

A good starter recipe. I used two bananas and applesauce instead of oil. The batter was thin so I made silver dollars. The pancakes turned out thin and flimsy (not dense like regular pancakes). The flavor was good, and I also added some chocolate chips. Beware that the pancakes may carmelize/burn a little on the griddle because of the sugar content of the 'nanners.

Kitty Litter Cake

This was a really fun cake to make and eat! I followed some other reviews on the recommendations as follows: I used Little Debbie brownies. They are easy to handle and mold. And you can get quite a few poops from one package of brownies! For the litter I used almost one entire pack of Golden Oreos and crumbled them in the food processor. I used one box of Butter cake mix and one box of Devil's Food cake and baked both of them together to save on pans and clean-up. I just baked them for a longer period of time. (You're going to crumble the cake and mix it together anyway...) I used one pack of Vanilla pudding and one pack of Butterscotch flavor. For the added reality effect (as if this needs more reality?) I used my fingertips and made paw prints. LOL It tasted good, and in my opinion it tasted a lot better the next day after the pudding was able to soak into the cake!

Hot German Potato Salad III

We quartered our potatoes and decided to add more sugar to the mixture as I think the recipe left it more on the salty side. We also didn't have fresh bacon and used prepared bacon bits and shortening. I'm sure it would rock with real bacon, though! I added a hard boiled egg to the mix just to add a little protein.

Wonderful Banana Cake

This recipe is easy for those short on time and is very much a no-brainer. I'm not a fan of banana breads but didn't know what to do with 3 over-ripe bananas. I followed the recipe but then added about 1/3 cup of PB2 (it's granulated Peanut Butter) to the cake batter. I baked it in a 9x13 pan per the instructions on the box. I didn't have any whip topping on hand but the cake was so moist it didn't need it. It's a great recipe and definitely a keeper!!

Mom's Best Waffles

Quick, easy recipe for waffles. I only had whole wheat flour on hand and these turned out great! I did let the batter rest for a little bit while I dusted off the waffle iron and let it heat up. Great with some real butter and syrup. GO MOM!

Garlic Croutons

I'm always looking for ways to spruce up my croutons. This is a great basic recipe. I didn't have french bread on hand but I did have stale bagels. I drizzled olive oil on the cut bagels and sprinkled on sea salt, white ground pepper, Old Bay seasoning and a dash of celery salt. Stuck them in the oven until they were brown and crispy. Mmmm!

Roasted Pork Loin

I put my herbs and garlic in the food processor, added some oil and then slathered it all over the pork loin. I also poked a few holes with the tip of a knife before placing in fridge for a few hours. I also used a meat thermometer rather than put it in the oven for whatever time to cook. The meat was extremely tender!! I'm not crazy about Rosemary and perhaps I put too much in, but it was well seasoned. We served it with a side dish of buttered couscous and a salad.

This recipe was incredibly easy and the results were great! I followed the directions except I spaced it and put the cold milk in with the eggs. It still came out well! I sprinkled a little coarse sea salt over the top before topping with confectioner's sugar and lemon juice. Mmmmm. Definitely a keeper.

Butternut Squash Fries

MMMM! These were really good. I bought pre-cut squash from Costco so I didn't have to peel, just slice into small thin pieces. I seasoned them with EVOO, cinnamon, sea salt, and pumpkin pie spice. I threw them around in a plastic bag and then baked them in a single layer, turning/tossing a few times while baking.

World's Best Cream Cheese and Pineapple Dip

At first I was intrigued, but I do like each of these ingredients independently, so why not, right? I got some good reviews from guests who couldn't figure out exactly what was in this dip that was so good! Creamy, garlicky, and a little sweet. Great with salty Triscuits.

Fluffy Pancakes

These were incredible! Light, fluffy, and has a melt-in-your-mouth smoothness! I did do substitute most of the ingredients (using whole wheat flour, Splenda, olive oil), and added a splash of vanilla, as well as add more milk to get a "batter" consistency. Even with changes, these were wonderful. No more packaged mix for me!

Chutney with Mint
