Baked Salmon II

So good and healthy. I liked the idea of wrapping them individually in foil. I also cut the oil in half and added 2T of butter, and used dried parsley since I didn't have any fresh on hand. Was low on time so didn't marinate for more than 10 minutes, and still came out great! Very yummy on jasmine rice.

Fish Tacos

My boyfriend and I were not fans of the sauce.. we didn't end up using much of it and made some guac and salsa to go with the tacos instead.

Beer Bread I

Wow!!!! Made this with Hoegardden sp? My boyfriends fav beer. He LOVED it. He is not a bread fan, but he nearly ate the whole loaf with the chili and could not stop raving about it. Made it with 1/2 a cup with sugar too, and let it rise for an hour before baking. SO easy and SO good.

Deluxe Blackberry Pie

Wow! I got rave reviews when I made two of these pies for two different Thanksgiving parties! I used all frozen berries (mostly blackberries, but a bag of mixed too) defrosted them, and pureed a cup of them.. that gave me plenty of "sauce" without taking away too many chunky berries in the pie.. to make it easier, I left the seeds in.. and it was still spectacular! I also left out all the spices, and used lemon juice for the brandy. A wonderful pie recipe, and it was only my first time making one.. but nobody could tell!

Chicken Tikka Masala

My boyfriend and I LOVED this recipe! So happy I can make it at home and not have to go out. A COUPLE THINGS: I only used 1/2 a tsp of salt in each the marinade and sauce. Also, it is VERY spicy this way; I had to stop eating it.. next time I'll reduce the Cayenne at least by half, and seed the jalepeno...I also left out the ginger because I didn't have any, but I couldn't taste the difference. A great recipe!!
