Extreme Chocolate Cake

I made this exactly as written. PERFECT!! It makes a very good cake. The batter scared me as it was SO thin but it all turned out in the end, then disappeared. I used canned frosting, I would not do that again, it did not do this cake justice. I will definitely be making this cake AND the frosting again. As for the person who used melted butter - NEVER use melted butter, it has to be solid or use oil.

Zucchini Quiche

FABULOUS! I followed the recipe with the following exceptions/changes. Instead of garlic powder, I used 3 large cloves of fresh garlic. Added 1tsp dried basil. I finely chopped the onion. And lastly I grated my bohemoth of a zucchini. I read to add more so used this literally foot and half long 4 inch diameter zucchini fresh from my garden. I think it was too much zucchini because it made too much for the pan but it definitely made some VERY good flavor. Especially with the basil and fresh garlic. I topped it off with Sharp Cheddar and more Parmesan. Will make this MANY more times!

Easy Iced Coffee

Very excellent basic recipe. Iced Coffee is my vice this summer and now I don't have to spend a ton of money on it! I also added lots more sugar, honestly needs around 3 tbsp instead of 3 tsp but it's all in personal taste. I also added 3 individual packets of coffee mate coffee creamers to it then the rest of skim milk, I will not do that again. Instead I will try vanilla flavored coffee syrup. I did add chocolate, and it's great!!

The Best Unbaked Cherry Cheesecake Ever

Exceptional light UNBAKED!! cheesecake. I've made a plenty of cheesecakes and this is just awesome! I doubled the recipe plus 1 more 8 oz package of cream cheese to use in a springform pan. Simply great, not too sweet like other people said, this was perfect.

Grandma's Lemon Meringue Pie

This recipe is easy to follow and makes the whole pie making nice. But next time I will omit the zest because eating this pie leaves an aftertaste like you actually ate the lemon rind. I even added a bit more sugar and that did not help, I use equal amounts of cornstarch and flour and it did wonderfully for the perfect filing. Next pie will not have zest and I'll use 3/4 cup lemon juice (2 lemons) and 3/4 cup water.

Banana Oatmeal Bread

Very Tasty! Only reason it got 4 stars is I think 350 for 50 minutes was too much, it got REAL brown, verge of being burnt. I also used butter instead of shortening. Love how the top is a nice crunchy texture and the bread remains very moist.

Honey Glazed Pork Tenderloin

Unsure about this one. I substituted the sesame oil for olive, and marinated the pork in the sauce. I cooked it as directed and it smelled horrible. Ended up tasting ok.. but kinda 50/50 on whether I'd make again.

Cinnamon Sugar Biscotti

I did not change even a granule of measure and I couldn't get the dough to stick. It was more of a crumble. So after treating it like cement to form a log, the dough continued to crumble when cut. The end product was not asthetically pleasing at all and taste how it looked.

Easy Cream Cheese Danish

I added homemade blueberry pie filling on top of the cream cheese. It was A LOT of cream cheese, probably too much to have added another filling. So far the upper crust seems too moist still but the outside is on the verge of being overdone, could be the juices from the blueberries. The icing also needs a little more milk. I will update tomorrow when my husbands unit tries it! Ok, the 119th Artillery had it gone in seconds, now I will have to make it again so I can try it, which will happen soon!!

Cinnamon Coffee Cake II

I decided to make it more difficult than it needed to be by trying cupcakes out of this. After a while of teaspoons of cake then crumble and so on, finally got them in the oven starting at 350 for 10 mins, then I moved down to 325 for 15 more mins. The toothpick came out clean but they did sink in the middles. I will update this tomorrow when I hear what my husbands unit thinks of them! I tried one before they got to the 119th... very bland. You really need to use a flavored cake mix. I also only used 1 box of pudding and with how much oil you use it's plenty moist. (The more oil the more moist, most of the time you can substitute oil for butter for a melt in mouth cake) I will try this again with either spice cake or cinnamon cake, but it's not exactly amazing.

15-Minute Marinated Chicken

Very good start! I added a little lemon zest, 2 cloves of garlic and a tablespoon of honey and substituted the spice with italian seasoning. The marinade was fantastic! I unfortunately used chicken thighs and with all the lemon juice tenderizing it, the texture ended up feeling like the chicken wasn't cooked at all. So use regular white meat chicken and I will definitely make this again!

Coffee Frosting

I really don't know how to rate this recipe... it tastes very good. But, when I made it I used instant coffee granules instead of liquid coffee and 1 cup less powdered sugar. It ended up being a dough consistency frequently and becoming a giant mess so I was forced to mix it by hand. I also ended up adding more milk because it was NOT spreadable enough for cupcakes and it has sort of has a powdery texture to it.

Limehouse Chicken

I used red pepper instead of paprika simply because I didn't have it. I also didn't have the wine or mint but it was still PERFECT. It was spicy sweet and citrus all at the same time. My husband even said it was worth the wait, which is REALLY good. Definitely my new favorite chicken!!! Today I again tried this recipe but with pork chops, STILL AWESOME!!
