I make this all the time! Absolutely great recipe. I usually add a little more brown sugar and pumpkin pie spice, but you don't have to.

Ham and Creamy Potato Scallops

I finely diced the potatoes and only had 4 lbs, they still did not fit in a 2 1/2 quart dish. So I had to grease another and after all was said and done the prep took more than twice as long as I anticipated. This is definitely a make ahead dish. I also added more cheese, the sauce didn't seem like it was enough. Baked it for an hour and a half at 300, and only the potatoes in the glass dish were cooked. The ones in the ceramic casserole were not. Next time I try this, because it is yummy, I will do all the same except put it in a glass 9x13 covered at 325 for an hour.

PHILADELPHIA Spiced Pumpkin Cheesecake

The only reason this is getting 4, not 5 five stars is because I had to make an alteration. I did not have gingersnaps so I used nilla wafers. I added 1 tsp pumpkin pie spice to the crumbs too. Everything else was made as written. Just perfect. This is a new fall favorite!

Zucchini Brownies

I JUST made these. Ended up with 2 1/4 cups shredded zucchini. These are SO awesome, VERY cake like brownies, SO moist. I am wowed. I will ALWAYS be making these whenever I have zucchini. I did not make the frosting, but the brownies are not missing it. Very great recipe.

French Breakfast Muffins

HOLY DENSE! For a breakfast muffin.. no. I followed the recipe to a T and the batter was so dense I could barley mix it. I was tempted to roll it out on a surface and cut it into "pucks" and stack those in the muffin cups. I ended up adding more milk then spoon dropping them in. They have barely any taste which would be ok, if they weren't so dense. And if I were thinking, I'd put the cinnamon and sugar on top BEFORE baking, versus all that work after baking just for breakfast. I will not, ever, make these again.

Cream Corn Like No Other

I halved the recipe and made a few changes..1. Used fresh corn cut off the cob 2. all skim milk instead of cream and whole, because that's all I had 3. Used 1/4 tub chive and onion cream cheese in place of parm. With these changes, it was SOOO yummy. My super picky kids wished I would've made a full recipe. I will NEVER buy creamed corn again, this is our family's creamed corn :-)

Chocolate Banana Bread

I love it as written. I read all the reviews and said enough. Just make it once as written, then decide what additions if any you'd like. I'm glad I didn't not add anything, it really is great how it is. Maybe, just maybe next time I may add coconut or white chocolate chips.

Chocolate Chip Cheese Ball

I think rolling this in crushed oreos is a much better idea than pecans. However, I am not comfortable with how much butter is in this. Just, wow. Next time, I will omit the butter and use more cream cheese. Also the preparation was not what I expected after making two other cheeseballs previous to this one. I had to freeze this one for an hour before shaping, that's in addition to the refrigeration. This is a 5 star IDEA, but this recipe as written, isn't what it should be.

Baked Penne with Italian Sausage

I found this really good. I omitted the oil since sausage is fatty enough, worked just fine. I also put half the mixture in the pan, spread cheese over that, then the other half of the mixture and more cheese. I used a shredded italian blend. Definitely will make again.

Baked Teriyaki Chicken

I think this is great how it is. Sometimes i add pineapple tidbits with their juice and omit the water. Often I even make the sauce in an oven proof dish (no cooking at this point), place the chicken in to marinate then throw the whole thing in the oven at 375 for 40 minutes. It's great EVERY time.

Broccoli Cheese Soup

I still need to thicken this, but after tasting it I had to write my review. This is SO fantastic. I will never make a different broccoli cheese soup. I used fresh broccoli, and only 4 cups of chicken broth. I can not say enough good things about this one!

Strawberry Coffee Cake

Chocolate Chip Cookie Dough Cheesecake

This is perfect as written! I also made it with Vanilla Greek Yogurt in place of sour cream and low fat cream cheese. Both are FABULOUS but I will make the low fat one more. I did over bake it too, 40 minutes with a pan of water in the oven would be perfect!

Baked Potato Soup V

Its a good base, wish I would've read the reviews sooner. Although I halved the recipe I still ended up using a whole quart of milk and still needed chicken stock. Made better Mashed Potatoes than soup. Rather tasteless too. I won't be using this recipe again.

Garlic Chicken

It was easy and tasted ok, but the "crust" to me gave it a rather dry texture. If I try this again I will use much more garlic and lower the temperature.

Easy Pleasy Mac N Cheesy - US Navy Style

Very pleasant tasting. The only suggestion I have is that it needs just a tad more macaroni. Not nearly the other half a 1 lb box.. but this recipe needs a good 10-12 oz macaroni, not just 8.

Pumpkin Fudge

I completely forgot the choc chips and vanilla until it was just warm. Luckily the chips did start melting and I got them incorporated ok before the fudge hardened. I ate what was on the spoon and WOW, VERY nice. Will definitely make again and NOT forget the choc chips :)

Pumpkin Pancakes

As is, these should be named gingerbread pancakes. They are good, but I was expecting pumpkin to be the dominate flavor. Next time I will omit the ginger and stick with pumpkin pie spice. I also used 1/4 cup brown sugar, perfect sweetness.
