Mom's Zucchini Bread
last time i didnt grate the zucchini well enough and my hubby wouldnt eat it, this time i used a yellow squash, halved the recipe, added unsweetened cocoa and a cup of chocolate chips. . we'll see so far the batter is delicious!

Zucchini Souffle
I added 1/2 cup applesauce, also shredded the zucchini and cooked it with onion in olive oil ti it got tender and baked it lie 25 minutes. fantastic! everyone ate it and loved it.

Bacon Cheese Frittata
really yummy, moist, everyone liked it. I added one tomato, and a jalepeno cheese, with some white american cheese. i had no onions, and no bacon, but came out really good.
