Tuna Noodle Casserole from Scratch

OMG - SOOOOOOO good! I had some corn in the fridge and I threw that in too. Made it perfect with that crispy, sweet addition. My husband told me that he would rather have this recipe than the Alfredo Tuna Noodle Helper (a long standing family favorite).

Grilled Sausages with Caramelized Onions and Apples

SO GOOD! I used sweet Italian sausage and gala apples and it was just wonderful. The apples and sausage complimented each other perfectly. The vinegar and brown sugar combined to make a wonderful glaze.

Broccoli Ham Turnovers

Really good. Didn't have green onions so I just used a sweet yellow onion. Also didn't have the cream for the egg mixture to brush on top so I just used egg whites alone.

Vegetarian Kofta Kabobs

Very good. I couldn't find adzuki beans which didn't really surprise me but I found online that red kidneys are an acceptable substitute. They were pretty hard to crush though. Next time I may put them in the food processor before adding them in with the other ingredients. I think my kofta balls would have stayed together better if I'd gotten the beans mashed better. I served this with a quick yogurt sauce that I just made up as I went (yogurt, cumin, cayene, and salt). Very good.

Marrakesh Vegetable Curry

Very delicious. I'm crazy about trying to make things lower in fat so I may try using chicken broth instead of so much oil. I will also use frozen carrots next time because I had a hard time getting the carrots to cook all the way through. Some of my other veggies got mushy because of it.

Nothing special. I love all the ingredients but the flavor just wasn't there. I doubled the sauce recipe too, and there still wasn't enough flavor. If I ever make it again, maybe I'll add more peppers.

Peanut Butter Noodles

I made a terrible mistake with this recipe. The only honey I had was cinnamon flavored for hot tea. I used it, and the flavor came out a little strangely. The taste seemed better after it was in the fridge for a day. It was a good recipe, and I may make it again. It is a very strongly flavored dish, very sweet.

Navratan Korma

This was just great! I didn't fry the nuts, I just dry roasted them in a pan. I also skipped frying the paneer since it holds its shape just fine without frying. I must have cut the potatos too large because they simply would not get done. I ended up adding more water so that it wouldn't get too dry. Instead of milk and cream I used fat-free half n half. I will make this again!

Red Kidney Beans (Rajma)

Very good use of spice but I ended up adding more salt. I pureed the tomatos and onions. I hate to not follow recipes the first time I make them but I needed to get more protein into this meal. I added a pound of chicken and cooked it in the sauce with the beans until the chicken was done. It turned out very well.

Potato Curry

Wonderful! I added about 2 full cups of peas to the recipe because I love peas. I like to avoid butter of any kind so instead of ghee, I used 1 tbs of butter and 1-2 tbs of olive oil. The flavor was not lacking and I will continue to make it this way.

Yakitori Chicken

This was just great. Wasn't terribly fond of the leeks but the chicken was out-of-control good. I cooked it at home and took it to my boyfriend's house. My mother actually called me on the phone to ask me what I had cooked that smelled so good. Excellant recipe!

Quinoa and Black Beans

Outstanding! I tried a quinoa recipe that was written on the back of a box of quinoa and didn't care for it. I decided to give it another try and I'm so glad I picked this recipe. It made me a believer in quinoa. I will definitely make this again!
