Absolutely Delicious Green Bean Casserole from Scratch

The taste was excellent. I don't usually like green bean casserole but this was very good--a perfect balance between the beans and sauce. It didn't get mushy at all. The lemon zest was a very subtle flavor. Next time I might try to saute the mushrooms before putting them in the casserole.

Downeast Maine Pumpkin Bread

Awesome--moist and delicious. Very good flavor. A nice balance between pumpkin and spice. Easy. I found it a little on the sweet side, but my kids really liked it.

Black Magic Cake

Fantastic cake--moist and great flavor. Easy to make. I will make it again. However, I had a VERY hard time getting the cake out of the pan despite greasing and flouring the pans. Next time I will use parchment on the bottom of the pan. Also because it is so moist, it is very delicate and needs a light creaming icing or glaze. All in all, the best chocolate cake I've made from scratch and I've tried many!

Chocolate Cheese Frosting

Very creamy and tasty. No sour flavor from the cream cheese. It was an easy icing to work with both to frost and decorate. I don't think that the cinnamon will appeal to everyone but it is easy enough to leave out or replace.

Pumpkin Spice Muffins

These muffins are pretty good considering that they are more healthy than the average muffin. I liked the almond extract. The muffins were very flavorful and moist.

Soft Sugar Cookies IV

Very delicious, moist cookies. My brother insisted that they were shortbread cookies. The dough worked pretty well with cookie cutters after I chilled it for an hour. I will make these again.

Tangy Red Cabbage

I thought that this was a very tasty recipe for cabbage. In future I might use rice wine vinegar instead of balsamic, but I think the recipe works very well as is.

Pumpkin Muffins II

I used 2 cups canned solid pack pumpkin because I didn't have the time nor inclination to use fresh. I was nervous because the batter was very thick, but they came out fine. The muffins were moist with good spicy flavor. My toddler loved them. In half the batter I added 1/4 cup nonfat plain yogurt. These muffins were more lighter, more cake light but they didn't look as good. The recipe yielded more muffins than expected but I might have smaller pans. The cooking time was accurate. I will probably use this recipe again.

Good flavor and the meat was very moist, falling off the bone. I liked the flavor. The broth seemed a little greasy and I would use less oil next time.

Grilled Shrimp Rice Noodle Bowl

I love Thai food and cabbage. So I thought this recipe had great flavors. It was very light. I found it very easy to prepare. I will, however, make some extra sauce.

French Buttercream Frosting

I made this recipe twice over the course of two days. The flavor is excellent; I think the butter extract really helps. it was the perfect sweetness for me, kids and other adults. Unlike other frostings, the texture was very smooth and light. It was NOT gritty from confectioner's sugar like some recipes are. The first batch came out perfect. The 2nd batch, however, had lumps of flour even though the cream/flour mixture was smooth going into the microwave and coming out. I used it anyway, and by the time I served it at room temperature the lumps had disappeared completely. I would love to understand the chemistry behind the flour but I'm just happy it was smooth and creamy by the time the kids tucked in! I love cake and frosting and this is the best buttercream frosting recipe I have found.
