I'm a single mom of a third grade boy. We try a lot of "mix-it'up" recipes together, as trying to get an eight year old to eat as healthy as I'd like him to can be a feat.
My favorite things to cook
I love my Mexican Lasagne - it is so easy! The Turkey Chili always goes over well, and is wonderfully versatile. I'm still working on a personalized tuna casserole, but we have loads of fun trying.
My favorite family cooking traditions
Mushy fingers! I loved growing up and making banana bread with my grandmother. She'd let us all squish the bananas with our hands to start her off. I seem to have not inherited the "baking" gene, but there are still plenty of other fun mushy recipes for my son to enjoy.
My cooking triumphs
Lemon-Lime Chicken for my dad. It was one of the first dishes I prepared for he and I to share. It turned out perfectly! I liked that it was healthy for him with lots of flavor (no salt); he liked that he didn't have to cook.
My cooking tragedies
I was 18 and trying to make mozzarella sticks. Luckily, it was January in New England with plenty of snow on the ground. The grease fire started, and was contained in the pan, so we simply ran outside and flppped in into a snowbank.
