Cream Cheese Christmas Cookies

Delicious! Didn't change recipe at all and turned out perfectly. Used serated knife to cut dough. Didn't have a problem at all and I only refrigerated for 2 hours. Will be a staple recipe throughout the year.

Gingerbread Men

My second time making these this season. Easy, and delicious. Kid-friendly! For those of you who find this dry....keep mixing! I used the instant pudding, it starts out dry but you just have to keep mixing, and mixing and mixing.

Hamburger Minestrone

Such a good, hearty soup. Used frozen pearl onions (yummy and sweet), Lipton Beefy Onion to flavor it as I didn't have beef broth, added a dash of Worcestershire sauce, and a can of creamy Tomato soup instead of the tomato paste (didn't have it on hand). Instead of the frozen veggies i just used frozen corn kernels and frozen chopped spinach. I thoguht it was perfect. Would have given it 5 stars (even my seven year old loved it)had it not been for my substitutions.

Breaded, Fried, Softly Spiced Tofu

This was good for a tofu recipe. I omitted the nutritional yeast and replaced the flour with a mixture of 1/2 soy flour and 1/2 cornmeal. Also I marinated the tofu over-night.

Vegan Mac and No Cheese

Not a replacement, but definately an awesome vegan substitute!!! Did start w/ the roux (vegan spread and soy flour). Added 1/2 soy milk 1/2 water and reduced cashews to 1/3rd cup (though i tripled everything else but the pasta which made it 'cheesier.' Believe cashews could be ommitted and still would be great. Hubby who hates anything vegan gave it thumbs up!

Mexican Wedding Cakes II

Wonderful. I used almonds and almond extract jut for a change from the usual vanilla. Even my mother in law who is a wondeful baker loved these!!! Also did roll them in sugar twice.
