Mediterranean Tilapia

Reviewed: Aug. 10, 2009
Great recipe. I added artichokes to it. Cooked the fish in 2 tablespoons of the sun dried tomatoe oil and 1 tablespoon of the olive juice so it would have flavor. Also sprinkled the fish with old bay seasoning. Topped with feta cheese. Yummy!

Simply Swordfish

Reviewed: Jul. 17, 2009
Super easy and yummy. I soaked the swordfish in lemon juice for about 10 minutes, threw them on the grill and sprinkled with about 2 TEAspoons each of dill and lemon pepper.

Broiled Tilapia Parmesan

Reviewed: May 9, 2009
Quick, easy, tastey! I threw some old bay on the fish before broiling. Added a touch of red pepper to give it a touch of a kick and a touch of garlic powder. I broiled it on low for the first couple minutes. Flipped them over, put the topping on and broiled them on high for the last minutes.

Beer Margaritas

Reviewed: Jul. 14, 2008
Holy Tequila, Batman! Made some adjustments the second time around based on the taste of the first batch. Here's what I ended up with. I used Corona for the beer. I'm not a fan of Corona - but it was good in this. Used Sprite for the water and doubled it. Doubling the sprite kills the strong limeaid taste. Used 6 oz of tequila and 6 oz of triple sec instead of the full 12 oz of tequila. Very good with those modifications! And quick too!

Chicken and Dumplings IV

As everyone else mentioned - I used broth instead of water. Much better flavor. I added in some cut onion, celery, peas and carrots. Great easy recipe.

Too Much Chocolate Cake

Great cake. Very rich (as if the title doesn't give that away). I dusted with powdered sugar and threw some fresh raspberries on.

Mom's Baked Beans II

Reviewed: Apr. 18, 2008
Good recipe. I only used 1/2 a cup of brown sugar. That was more than sweet enough. I also added in a some cut up onion. I put everything in the crockpot. Bacon tends to be too chewy in the crockpot so I used ham instead.

Amish Breakfast Casserole

I was a little scared of the cottage cheese - almost did not add it. I'm glad I did. This is super moist and very good. I used moz. cheese instead of the swiss.

Kabob Marinade

Reviewed: Apr. 18, 2008
I doubled the recipe and had more than enough for a pound a salmon, 2 pounds of steak and 6 cups of vegetables. I only used half of the soy sauce as that's all I had. It still turned out wonderful!

Pumpkin Pie I

Super easy to make and tastes wonderful. There is plenty for one pie. The pie is a little more cake-like than normal pumpkin pie - but that made it all the better.

J.P.'s Big Daddy Biscuits

Reviewed: Jan. 21, 2008
I had almost given up on making my own biscuits. I am so glad I found this. The only thing different I did was put the entire batch of dough into a baking stone. Then we just scooped it out and put gravy on top. It had to bake a little longer. Update: I've been using this recipe for regular biscuits. The flavor is much better if you use butter instead of shortening.

Mouth-Watering Stuffed Mushrooms

Reviewed: Dec. 30, 2007
The best mushrooms! The mixture makes enough to stuff plenty of mushrooms. I chopped up some whole mushrooms - sauted them in a little olive oil with garlic, worshire and cayenne and threw them into the filling. I also put in a few extra splashes of worshire sauce and upped the cayenne pepper a little for the filling.

Cream Cheese Sugar Cookies

Reviewed: Dec. 24, 2007
Great sugar cookies. I added 1/2 cup extra sugar. Make sure you flour your hands and the dough if you are rolling. It is very sticky. Keep the dough you are not working with in the fridge until you need it. Take out of the oven when the bottoms start browning. The top still looks a little uncooked - but finish cooking while they are cooling and make for a super soft cookie.
