Clams a la mariniere
About this Cook
I've been cooking ever since I was tall enough to reach the stove... I ended up taking over the holiday cooking around 14 years old (my mother was all too happy for a break!), and now cook daily for my boyfriend- my goal is to fatten him up by next year, while simultaneously maintaining my own weight. I love cooking, and feel most at home in the kitchen. When I'm there, everything seems to flow, and the day's worries just melt away.
My favorite things to cook
I love to make ethnic dishes, and am currently learning how to use the spice combinations in Indian cooking. When I'm feeling a little homesick, though, I bring out the big pot and wooden spoon, and make practically everything that my grandmother has taught me: pan roasted chicken, risotto a la milanese, lasagna with traditional ragu, pinzetta. The bold, refreshing flavors of traditional italian cuisine just make the world a better place! Also, I enjoy baking, and have a passion for sweets. I've been selling my homemade pound cakes for about a year now.
My favorite family cooking traditions
When the cold weather hit, my grandmother would always bring out the chestnuts, pinzetta (a warm Italian 'bread pudding', full of figs, raisins and fennel seed, baked until golden) and hot chocolate that was thick enough to eat with a spoon. Those few things always seemed to warm my soul as I sat in front of the fire.
My cooking triumphs
My first rustic apple pie, complete with non-soupy insides and a golden, eggwashed exterior. I was in heaven, and haven't stopped since!
My cooking tragedies
One tragedy that I distinctly remember was a vegetable pot pie that I made on a whim. It was so bland and gooey that I promptly threw it all out.

Creamy Chocolate Frosting
I followed the recipe, but used a total of 3 cups sugar, and 6 Tbsp evaporated milk. I think regular milk may be a bit too little flavor for it, but as written, it's hands-down the most awesome chocolate frosting I've ever had! I'm going to try this in lemon and vanilla too, just to see what could happen :)

David's Yellow Cake
Tasted more like scrambled eggs than yellow cake, and the texture wasn't so great. Not really dry, just not flavorful like I was hoping. The only thing going for this cake is that the batter tastes good...that's about it.

Chipotle Crusted Pork Tenderloin
Absolutely amazing with just a few changes! I changed the proportions to 1/2 tsp garlic, 1/2 tsp onion, 1/2 tsp kosher salt, 1 tsp chipotle chili and 2 tsps brown sugar. I used a 6oz can of pineapple juice, moistening the spices just enough to make a paste to rub on the tenderloin. The remaining pineapple juice and 1/4 cup brown sugar were mixed together for basting every 15 minutes. I put this on an electric rotisserie at 350 for about 40 minutes. Delish, and so completely tender and full of flavor. The smokiness of the chipotle and the sweetness of the pineapple melded together harmoniously... all my mother in law could say was "wow" :) (note: served this with light scallion mashed potatoes, steamed lemon asparagus and fresh steamed and buttered corn. yum!)
