Zucchini Brownies
A great way to use extra zucchini! I was glad I'd read the other reviews about the dry texture of the batter. I used 1/4 c. oil and 1/4 c. applesauce, then a little extra applesauce at the end because it was almost too dry to mix. Instead of frosting, I just sprinkled chocolate-peanut butter chips on top after baking. The brownies aren't super choclatey or sweet, but very good with something sweeter on top.
