Basic Coconut Cookies
I am not a big fan of coconut cookies but my husband favors them above any others and we both enjoyed these. I enjoyed them because they were easy to make with the basic cookie recipe and they did not get flat like many cookies do. They were just right, nice and chewy.

Zucchini Soup I
This was really good. The flavors were great together. I used 4 potatoes instead of flakes just because I don't keep flakes and I had the fresh herbs on hand. Some fresh Italian parsley on top made it a pretty dish. Served it with hot crusty bread and it made a nice stand alone meal for a cool day (with seconds of course!). I also used one pot for start to finish and pureed it with my stick blender in the pot so it was all easy as well as delicious. It is a keeper for us.

Absolute Best Liver and Onions
Great! I could never bring myself to eat liver before but the lady I get my organic grass fed beef from doesn't either so she told me that I could have it free if I wanted it so I thought I would just give it to my dog. My hubby suddenly claims to like liver so I prepared it for him and tasted a bit. I then had to have an entire slice! Now that I have a source for FREE organic GF liver and this recipe I am happy as can be.
