Spinach and Leek White Bean Soup

This is a wonderful soup. It calls for some of my favorite ingredients, those found in the healthy Mediterranean diet. Everyone loved it, especially my husband who enjoys a homemade and hearty one dish meal he can eat with a spoon. This will be top of my favorites list and one I will make again and again. Thank you!

Turkey Burger Pie

I added 1 box frozen chopped spinach, thawed squeezed dry, and 1 small pkg. fresh mushrooms coarsly chopped to the turkey and onion mixture (next time will add 2 cloves minced garlic). You need to salt and pepper the turkey mixture to taste. I used white cheddar for the cheese and added 1/4 tsp.nutmeg to the egg mixture before pouring over the top of the pie. Excellent recipe and a great base for all sorts of additions to make it unique.

Zucchini Cake III

I prepared this strictly by the recipe with no changes and it was fantastic. I agree with another rating that this cake improves if prepared a day ahead as the outer "crust" moistens up and flavors meld together even better. I used the leftover pineapple juice to prepare the glaze which offered a nice tangy flavor. Very impressive presentation especially on a tiered cake plate with a glass lid. Next time will try to reduce the fat grams by substituting some apple sauce as suggested by another cook.

Lemon Barbeque Meatloaf

This recipe is sure to please. It is a dressier way to prepare meatloaf and is our family's favorite. The topping is very special and spicy. I first saw this recipe over 30 years ago using 1 1/2 lbs of ground beef and formed into 6 individual loaves. These brown very nicely and with the sauce on top and lemon garnish the presentation is very nice. If in a hurry the meat mixture can be formed into a single ring and cooked in the microwave for about 10 minutes for 1 1/2 lb. beef, topping with the sauce after about 5 minutes. Garnish with lemon after cooking.

Slow Cooker Spicy Black-Eyed Peas

Served this for New Year's Day dinner over rice with baked chicken breasts, sweet corn bread, and fried cabbage. Very southern and delicious. Will definately make again!!

Hot Spinach and Artichoke Dip

I tripled the recipe for a large engagement party. I generously added prepared garlic and served this with rice chips and pita chips in a silver chafing dish. Very elegant presentation. I recieved many compliments on this one. The bacon offers a special twist. The most time consuming part of the preparation was cooking the bacon which I did in the microwave on paper towels to insure crispness. A sure keeper and definate crowd pleaser!

Cranberry Nut Bread

Oh my goodness! This is the best tea bread I remember baking or eating in my 35 years of cooking. That's pretty strong. The full size cranberries shout with tart flavor in every bite. The orange undertones are perfect. Problem is that it is gone all too soon. A GREAT gift for anyone, especially during the holidays!

Peach-a-Berry Pie

This makes a beautiful pie. I make my own oil pastry crust but whatever crust recipe you choose this will be a sumpiously delicious offering. Freezes well. If you do freeze, bake frozen and add an extra 30 minutes to the cook time.

Perfect Turkey

Indeed the best turkey I have ever prepared in my 25+ years of hosting Thanksgiving. My husband and I share the responsibility. We did it this year in a turkey roaster and omitted the wine soley by accident. The drippings are perfectly seasoned for gravy. There were no leftovers. This was a first!!

Sea Bass Cuban Style

I made this for a dinner party of 6. It was perfect and very gormet. The salty capers and olives season the fish perfectly. Very colorful and impressive presentation. Definately company fare!

Blueberry Coffee Cake III

truly the best coffee cake I've ever made. It recieved great raves from my bible study group. I used frozen berries making the batter stiff and spreading in the pan a bit challenging butit did not affect the end result. Spectacular!!
