Easy Ice Cream Cake
This is a great recipe to make ahead of time, and it's very easy too. I needed 22 ice cream sandwiches to fill the pan. I used peanut butter ice cream sandwiches for one of the layers and added butterscotch topping along with the hot fudge. I also sprinkled toffee bits between the layers and sprinkled the top with chopped kit kat bars. Some guests thought it was too rich and couldn't finish their pieces, and some came back for seconds.

Ibby's Pumpkin Mushroom Stuffing
I've made this stuffing for the past couple years and it's always a hit. I make the downeast maine pumpkin bread recipe from this site a few days ahead of time to give it time to dry out. This is also a great vegetarian side dish if you use veggie broth.

Grandma's Slow Cooker Vegetarian Chili
Contrary to some reviewers I thought the baked beans added a nice sweetness. I served this over egg noodles with sour cream and shredded cheese and it was almost like a stroganoff. I also had trouble finding black bean soup, but the brand Nile Spice does make a single serving dried soup in a cup to which you add boiling water. I used this and half a can of black beans.
